Do I need to put this cheese in the fridge? I notice it always just at room temp in the store, but I didn't know if for a longer period of time, it should be in the fridge. Thanks!

Some people seem to be confused about what I'm asking. I'm not talking about the processed parmesan that comes in the cardboard container. I'm talking about a wedge of parmesan reggiano that you buy in the cheese section. In my store, it's next to all the other cheeses, which are in a small refrigerator bin, but the parmesan reggiano is to the side of the little cheese fridge, which is the reason I was confused. Thanks!

Yep, you need to keep it in the fridge. Store it wrapped in plastic wrap and then in foil in the refrigerator. But serve Parmigiano-Reggiano at room temperature. Never freeze it.

You should always refrigerate the cheese. The only one you see on the shelves at room temperature are the grated cans which would have preservatives in it...not the freshest way to go with parmesan...Get the block of parmesan cheese and grate yourself or get the grated parmesan cheese you find in the fridge/freezer section and keep it refrigerated.

beware this is a trick
Pram. is a dry cheese and if you look the dispenser is ON the table in the restaurant all day..
Susan D suggests it will sweat
I say the fridge will do that even faster.
BUT the container does say "refrigerate after opening"
I suggest you experiment,,, put one in the fridge faithfully and see for your self if it clumps,,, then keep the next on a shelf in a cool place.. My parm. is always on the same lazysusan shelf as the salt and pepper the past 45 years..

I always keep the wedge in the refrigerator and take it out 1/2 hour before serving to bring to room temperature because we like it on soups, pastas and salads. It's on the table with a small grater and everyone takes what they want.
I keep it wrapped in plastic wrap in the fridge.
I keep the rind when it's finished to put in soup stock or pasta sauce.

YEs, once opened it should be refrigerated. Air will make it go bad. Plus, when in block form, it cuts and shreds better. It's made from milk or cream, and you wouldn't store that on the counter top would you?

Yes. You need to keep it in the fridge to keep it fresh. It already doesn't have a very long shelf life.... refrigeration extends it considerably.
