like the first person pronoun "I" in English. Eye would be longer than I, so it would make it incorrect. Reichstag = r + I + kh [a glottal stop: http://en.wikipedia.org/wiki/Glottal_stop] + shtahg.
In summary: r+ "I" + kh + "shtahg"
Reichstag means "Imperial diet" in German
Albrecht Einstein's [we came to know him by his name's English equivalent: Albert.] name is in German or Yiddish [He's Jewish.]. ein = one, stein = stone, in German. So Einstein means "one stone" or "a piece of stone" in German or Yiddish? Just my guess.

Same as "eye".
A lot of people confuse German 'ei' and 'ie'. Just remember to think of the last letter as English.
'ei' is pronounced like naming the letter 'i'
'ie' is pronounced like naming the letter 'e'
A loose pronunciation of the word you gave is "rikes tug".
Depending on the region of Germany the pronunciation "rysh-stug" is correct too.
Note the "tag" part should be pronounced like a "tug" not a "tag" in English.
