Ham is always great for a New Year's Day meal.
Glaze for ham:
2 cups brown sugar
1/2 cup honey
Juice from one 16 ounce can of pineapple rings in their own juice.
Mix until smooth and spoon half of mixture over the ham. Spoon the rest over half way through the baking time. Simple and easy.

Lime Jello Salad
2 large boxes of Lime flavored Jello
1 16 ounce block of cream cheese - softened
1 16 ounce can crushed pineapple - drained reserving juice to make jello
1 cup heavy whipping cream or 20 ounce container of Cool Whip
Make jello according to package direction for the quick-set method using the reserved pineapple juice for part of the cold water - refrigerate until soft set. While jello is setting, mix pineapple and cream cheese in a blender or food processor until creamy. Mix into the jello. Whip whipping cream until hard peaks are formed - fold into the jello mixture and pour into a jello mold. Chill for at least four hours or until set - I like to prepare this a day or two before and let it set in the fridge.

Generally we go out on New Year's but I still make a small dinner for anyone who stops by.
I always make ham. Instead of a whole ham I buy two thick ham steaks. I take a piece of foil paper and sprinkle some brown sugar on it. Then I lay the 1 ham steak. I spread this with an equal mixture of mustard and brown sugar. Then lay the other ham steak on top and sprinkle this with more brown sugar. Wrap it tightly and pop it in a 350 oven for about 40 minutes.
Another thing I like to make is corn bread. I use Jiffy mix and follow the direction. To this I add 1 can of creamed corn, 1 stick of melted butter, 1/2 c. of mayo, and 1 c. of yellow cake mix.

If you want a nice baked smell, buy 2 packages of the croissant rolls in those packages you hit on the counter to pop open. Open the first one and separate into the triangles. Lay them around on a cookie sheet in an oval shape with the points out and the sides overlapping the one next to it. Take a package of almond paste (comes either in a can or plastic wrap like Jimmy Dean sausage does and goes by either almond paste or marzipan). Roll it in your hands into a rope and place it down on the center of those triangles. Place a little raspberry jam (or whatever flavor you would like to use) along the rope. Open the second can of the croissants and separate out into triangles again. This time put them with the points in instead of out - along the top of the other ones so the rope is in the middle - again edges overlapping on that top layer. Then for the top layer, bring the points down and attach to the lower level and for the lower level, bring it's points up to attach to the top layer so the whole thing is sealed. Bake in the oven according to the package directions. Once it's nice and golden brown (Ok if some of the jam leaks out), make some icing using powdered sugar, vanilla and almond extract and water. You can color it if you want for whatever season you are celebrating - like pink for Valentine's or just leave white. You can add candied fruit if you'd like when the icing is still wet but not necessary. Once it's set up, slice into small slices and put on a pretty plate and serve. Very good.
When I have my granddaughters over, they like to make a small one using one can of the croissants - half for the bottom and half for the top. They have made it into a heart shape for Valentine's and given it to their mothers.
Very simple and yet elegant to anyone who loves almonds. It keeps well for a couple of days.
