Welcome to the wonderful world of juicing:) I have been juicing for about 5 yrs now and the difference in my and my husband's health is simply amazing! You and your fam will LOVE the juicer! I would reccomend getting a book with simple recipes because there are sooo many good ones! The BEST are any by Jason Vale "The Juicemaster" (http://www.juicemaster.com/index.php)... you can order them on Amazon or ebay. A good one to start with is "The Juice Master's Ultimate Fast Food" because it tells you about each fruit/veg and the benefits, as well as numerous recipes to make. You will love all his juices and smoothies- every one is great! The library also has good books with basic info and recipes.
As for your 2 yr old, carrot-apple juice is a wonderful choice to start with. You can also add a little spinach to the carrot-apple juice which is full of nutirents. Kids don't taste the spinach at all. they also really love apple juice. and a great treat is apple-lemon or apple-lime. Juice 2 apples and 1/3 of a lemon (or lime). You can add a couple ice cubes if you like it chilled... it tastes just like lemonade (without the refined sugars and additives).
As for the pulp, lots of people use it in their gardens... you can look online for cookie/muffin recipes. I used to try and use it for baking when I first started juicing, but now I combine so many different fruits and veggies when I juice (not to mention I juice 4-5 times a day!) it's easiest just to throw it out for me. (I know you don't want to do this though so I am sure you can find great nutritional recipes online:)
I hope you and your family like juicing and let me know if you ever have any more questions:)

you can put your pulp in your cake recipes. For instance, apple pulp into applesauce cake, carrot pulp into carrot cake - makes for a very moist cake. And if it's mixed pulp, you can create your own recipes with it. Either way it will make a very moist and flavorful cake.
I'd imagine you could also use the pulp when making soups. I would use only the veggie pulp for that, though. I know I will make soups with veggies and then puree the veggies after they are cooked for a nice creamed soup - you could use your pulp for that without having to do the blender step!!

I have seen some Pulp recipes adding it to Muffins. But I would only do it with things you would put in ther muffin anyway: Carrots, Apple, Squash etc. I just don't see spinach or kale good for that!!!
Also consider soup or broth made with it.
Here that same question on a veggie site

IF you Garden it would be great added to your compost.

pulp is a wonderful addition to baked products, bread, cake, stewed fruit, jello with fruit in it, thick pie fillings (such as a citrus filling).
can go into oatmeal as a flavoring ingredient
if you peeled the fruit, you can make candied fruit peels(it's easy)
chocolate pudding with orange pulp mixed in
apple sauce with apple pulp or orange pulp
veggie pulp goes in soup, stew, almost any cooked veggie dish
the list goes on and on
pulp has fiber, thickening properties, sweetness and all the vitamins and minerals in the fruit(most are in the skin).
enjoy your juicer, and use the most nutritious part of your fresh food. after all, you paid for it. don't throw it away.

Congratulations on the juicer. First for juice recipes, I make ices which come out so good most of my friends want to back me into producing it for resale. The basic recipe is ginger root, carrots , celery, apples and oranges. Apples are the biggest ingredient by far. We then put in in the blender with bananas and frozen berries (some with blueberries and some with strawberries) We use frozen berries from Costco as they contain no extra ingredients and have the stems already removed. We also make some with lemons and a few strawberries which is my wife's favourite. We put them in little paper cups and freeze them. Since we make about 60 at a time we spend less time cleaning up everyday after the juicer. Only once every 60 servings. The ices make a great dessert serving and I let my kids eat it before meals (let it ruin their appetite- it's much healthier than the meals) The ones with strawberries is very sweet while the lemon ones are sour whichever taste you prefer.
We're experimenting with the pulp and so far nothing great, we tried carrot meatballs etc. We don't want to put it into anything with added sugar. We're going to try a couple of ideas with apple pulp this week. If you get any good recipes please share them.
