I have to make a small amount of potato salad. I only need and have 4 potatoes. I need a simple and easy recipe. Can anyone help?

4 potatoes
4 eggs
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste

DIRECTIONS:
1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.

2. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.

3. In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.

POTATO SALAD

4 potatoes - cooked with their skins on and peeled
4-5 hard boiled eggs - diced
1 hard boiled egg - sliced
1/4 medium white or yellow onion - diced
pickles - diced (either sweet or dill to your liking)
1 stalk celery - diced (optl)
3 radishes - diced (optl)

DRESSING:

Mayonnaise - apx 2 cup
mustard - apx 4 T
black pepper - apx 1/2 tsp
pickle juice or milk - pickle juice has more flavor - apx 1/8 - 1/4 c
celery seed (optl) - apx 1/4 tsp
black pepper to taste - apx 1/4 tsp
salt to taste - 1/4 tsp

Mix the dressing ingredients together. Pour over the rest of the salad and mix well. Should be a little moist - will be absorbed by the potatoes as it cools. So, if you need to make more dressing to get it a little moist - do so.

My son's mother-in-law also adds some cooked crumbled bacon to the salad and Thousand Island dressing to the above dressing - you could simplify her recipe by just adding a little catsup to the above dressing recipe if you'd like. Either way is very good.

You don't say what other ingredients you have available. I will give you basic potato salad dressing.

Mix about 1/2 cup mayo, with about 1/4 cup mustard (or to taste) add salt, pepper to taste. Add any other savory spices you like. I add garlic powder, a little Tabasco, celery seeds....what ever you like. Be sure to taste to see if it's good. Set aside.

Dice 1/4 of a small onion, dice 1 celery stalk. If you have olives, they add a little color. Slice or dice if whole. Hard boil a couple eggs. Dice one, slice one. You can also add diced pickles or relish. I don't like it this way, but feel free if you like pickles.

When ready to mix, add small amounts of dressing until you are happy with the consistency, add the rest of the ingredients, saving the sliced egg for garnish. When well mixed, arrange sliced egg. Sprinkle with paprika for color.

Sometimes, I add a little cooked bacon.

You can also make a baked potato salad, by using sour cream in place of the mayo and mustard. When I make it like this, I use sour cream with a couple table spoons mayo, salt, pepper and garlic powder.

Diced onions, shredded cheese, diced egg, olives, cooked crumbled bacon. I garnish with cheese bacon and olives.

GERMAN POTATO SALAD

3 c. diced peeled potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar
2 tbsp. water
3 tbsp. white sugar
1 tsp. salt
1/8 tsp. ground black pepper
1 tbsp. chopped fresh parsley

Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool. Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside. Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil. Add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

Cook, cool, peel, and cut potatoes into small chunks, add the remaining ingredients:

For dressing, use Miracle Whip, with a little regular mustard mixed into it. Add just a little mustard as you can always add more. Two hard boiled eggs chopped, a little diced onion and celery, and add a little sweet pickle relish, or chopped fine sweet pickles. You can adjust ingredients as by taste testing. Salt and pepper to taste.

Optional: a little diced green bell pepper and diced pimentos.

I would boil the potatoes and one or two eggs. Mash them all together, not too mashed up though, a little chunky. Add mayo (about half a cup), cut up a dill pickle really fine, add a couple of green onions, salt and pepper. You may need to adjust the mayo, salt and pepper to taste.

cut potatoes in bite size pieces and boil til tender cool add a chopped hard boiled egg a tablespoon of relish ,salt, pepper,a 1/4 teaspoon of mustard a piece of celery chopped into small pieces 1/4 of a small onion chopped and mayo or miracle whip stir and let stand in refrigerator then serve

Classic Potato Salad
Prep: 40 minutes
Chill: 6 to 24 hours

Ingredients
2 pounds potatoes (4 medium)
1/4 teaspoon salt
1-1/4 cups mayonnaise or salad dressing
1 tablespoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup thinly sliced celery (2 stalks)
1/3 cup chopped onion (1 small)
1/2 cup chopped sweet or dill pickles or sweet or dill pickle relish - I prefer the dill pickles or dill relish
4 Hard-Cooked Eggs, coarsely chopped
Lettuce leaves (optional)
Paprika (optional)

Directions
1. In a medium saucepan place potatoes, the 1/4 teaspoon salt, and enough water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until just tender. Drain well; cool slightly. Peel and cube the potatoes.

2. Meanwhile, for dressing, in a large bowl combine mayonnaise, mustard, the 1/2 teaspoon salt, and the pepper.

3. Stir in the celery, onion, and pickles. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.

4. To serve, if desired, line a salad bowl with lettuce leaves. Transfer the potato salad to the bowl. If desired, sprinkle with paprika.

5. Makes 12 side-dish servings

1-1/2 pounds new round red potatoes
1 cup light mayonnaise or salad dressing or regular mayonnaise or salad dressing
1 tablespoon yellow mustard
1 tablespoon white wine vinegar
2 teaspoons sugar
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1/3 cup sweet or dill pickle relish - I prefer to use dill relish
1/3 cup sliced green onion
3 hard-cooked eggs, coarsely chopped

Directions
1. Scrub potatoes thoroughly; cut into bite-size pieces. In a large saucepan place potatoes and enough lightly salted water to cover potatoes. Bring to boiling; reduce heat. Simmer, covered, for 8 to 10 minutes or just until tender; drain. Cool slightly.

2. In a very large bowl stir together the mayonnaise, mustard, vinegar, sugar, pepper, and salt. Stir in the pickle relish and onion. Add the cooked potatoes and eggs. Toss lightly to coat. Cover and chill for 2 to 24 hours. Makes 10 side-dish servings.

3. Bacon-Avocado Potato Salad: Prepare as above, except before serving stir in 1 avocado, seeded, peeled, and chopped, and 3 slices bacon, crisp-cooked, drained, and crumbled.

here is a tasty one..

cut potatoes in pieces, doesn't matter how big or small, cook them until they are soft.. drain them, then add salt, pepper, any seasoning you like, then cut up celery, add relish if you want, and apples, and add mayonnaise then mix together.. if you want it to be soft without chunks of potatoes, just mash it all together.. :) It is very good, and easy to make.. :)
