I've only had him a week but he will only poop on bushes... I've only seen him go in the grass once... He was a stray before I got him...

I've had a few that have done that - it seems related to (and I know this is a cop out of sorts) residual instincts. The first dog that did this was a stray too and I believe the others just copied since he was a very dominant sort. Lone dogs rarely want to make it easy for other carnivores to find them. Another possibility that I've come across is that fact that puppies develop a preference to where to relieve themselves at a very young age. A dog raised in a barn is likely to prefer going on straw, etc and it is the reasoning behind the old fashioned way of house breaking (using newspapers). Since your puppy was in the wild, he may have simply learned to go on bushes because there were no manicured lawns.
