I'm assuming what you meant was you need a recipe for one because you are very hungry and you don't want to make lots of food that will require you to eat it for the next 5 days.

Open a can of tuna fish and drain it. Add diced onions, diced celery, a little pickle relish (sweet or sour your choice). Season with a little black pepper and celery seed - can even add a little dill if you'd like. You can add a diced hardboiled egg to the mix if you'd like. Then add mayonnaise until it all holds together and the mayonnaise covers everything.

Take 2 slices of bread, butter one side and place buttered side down in a skillet. Toast it until it's golden, do the same with the other slice of bread. When the second slice is toasted on one side, butter the side that isn't toasted, flip that slice and put the untoasted side down. Mound your tuna fish mixture on top of the bread. Place the other slice of bread, toasted side down onto the tuna fish and kind of flatten out - don't squish the tuna out of the bread, though. When the bottom is toasted, butter the top side and flip over the sandwich and toast that side. When all toasted, serve. Cooking it that way allows enough time to heat the tuna mixture and to make the bread toasty on the outside but still soft on the inside.

Enjoy! Not too hard to make. My hubby just loves his grilled tuna fish sandwiches. And, the can will make 2 sandwiches so put the leftovers in a small container and have again tomorrow!!

Chicken and variations

1 chicken breast ( does not matter, skinless, skin on, bones or not)
italian dressing, mayonaisse, or mustard ( basically whatever "spread" you have
bread crumbs- again, whatever you have. If you have the italian seasoned ones, great. If you have plain, OK- add some seasoning. If you dont have any- toast a couple pieces of bread until really dry ( best done in oven on low heat-) and smash into crumbs ( in a zip lock, blender, processor, again- whatever you have ) Or use cracker crumbs, or crushed cereal, or crushed tortilla or potato chips- just make sure the "spread" doesn't clash with the crumbs
rinse and dry the breast. spread with spread. roll in crumbs- spray both sides with cooking spray. Bake in 350 degree oven- 25 minutes for boneless skinless, 45 for bone in .

Serve with what makes sense- pasta, rice, baked potato, whatever goes with the spread and crumbs.

have a good glass of wine.

Enjoy.

you mean for you, that you are the single person you are cooking for, or for a group of single people?
Hmmm.....try this, if just for you...
Spaghetti Squash
Tomato Sauce
Bake the squash at 350 for 45 min
heat sauce. Spoon and fluff your spaghetti squash after you open(cut) it open lengthwise. Top it with sauce.
Add Parmesan and parsley to the top.
While you are baking squash, put garlic bread wrapped in foil in oven after your squash has been in for 30 min.
Very tasty. Very healthy. quick, take a nice bubble bath w/wine while you cook.

cook up some chicken and chop it up, or just get a can of the chicken breast already done up. Get a bag of Doritos, a can of cream of chicken, some Rotel or hot sauce, and some cheese. Mix it all together in a baking dish and cover it with more cheese. Stick in the oven for 15 minutes @ 375.
