Well, if you mean being a line cook or a chef, there are a lot of aspects that can be problematic.
- Long hours: Depending on where you work, you can sometimes have to work from open to close. A lot of times you have to cover for fellow cooks who did not show up due to the fact that they were either hung over, in jail, stoned, or just plain ol' no call no show. Sometimes you will have to work more that 5 days a week for the same reasons.
- Injuries. Being a line cook or chef requires you to work with a lot of knives, hot kitchen pots and pans, ovens, etc... very quickly. You will get cut, you will get burned. You can't stop to nurse your wounds. You have to keep working. I saw a line cook, cut off most of the tip of his finger and still have to handle the dinner rush.
- If you work in a kitchen with a chef, you will have to deal with a lot of yelling, condescension, insults, and sarcasm. It seems that every chef comes with his special brand of this. There will be chefs that will throw things at you, that will throw food at you, shout at you, scream insults at you, etc... especially during dinner rush.
- Unless you work for a large established restaurant chain, you won't get any benefits (with the exception of MAYBE free meals during your shift).
- If the restaurant is slow, you will most likely be sent home for the day... ultimately meaning that you will not get your hours for the week. This above all else was probably the worst aspect for me.
But if you love what you do, any of this stuff that I have mentioned will not bother you at all.
I suggest you read "Kitchen Confidential" by Anthony Bourdain. It may scare you, but if you are considering a kitchen career, this is a must read for you.

Huh? What kitchen job? I doubt I'd EVER take a job working in a kitchen. I know I'm a good cook, but wouldn't want to be on my feet all day running a kitchen. I love entertaining and cooking for a group, but my feet know I've been cooking all day. Problematic? I don't get it. What would we do without kitchens? I use my kitchen. But is it a job??? No!!! Not even remotely so.

You smell like grease and your hand prune something fierce from washing all the dishes. You get yelled at a lot if the meal isn't perfect. You have to make like 3 or 4 different things at a time.
