Simplicity, and butter are the key to great pancakes. Cooking them on a cast iron skillet also helps.
Here's a classic recipe that will make perfect pancakes, every time. Keep in mind that you might have to add a touch more milk to the batter if the humidity is low.
1 1/2 cups all-purpose flour
1 teaspoon salt
2 tablespoons sugar
2 1/2 teaspoons baking powder
1 egg
3 tablespoons melted butter
1 1/4 cups milk (or buttermilk, if you want)
1. Beat egg.
2. Stir in butter and milk.
3. Combine flour, salt, sugar, and baking powder.
4. Stir into egg mixture. (Don't over-mix the batter! Leaving a few lumps is perfectly fine)
5. Lightly grease a griddle.
6. Heat griddle and drop about 1/4 cup batter onto griddle.
7. When bubbles begin to appear around outside edge and break, turn with a spatula and cook on other side.

I agree with Brenda, made from scratch are the best!!! Also, don't cook them on a pan or griddle that is really hot, because you end up with burnt on outside, and not all done in the middle. my favorite recipe is this:
1 cup flour
1 teaspoon baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 egg
3/4 cup milk
2 tablespoons vegetable oil
Mix together first 4 ingredients, then add the rest of the ingredients and mix till just blended. Cook until the top is bubbly (about 1 to 1 1/2 minutes), then flip and cook till golden brown. I usually make a double batch since this doesn't make very many pancakes.

Very Berry Pancakes
Ingredients
2 eggs, lightly beaten
3/4 cup milk
1 package Martha White® Strawberry Muffin Mix
1 cup whipping cream, with 1 tbsp sugar
OR 1 cup sour cream
1 tablespoon sugar
1 cup blueberries
confectioners' sugar
Preparation Directions
1. Heat griddle or large skillet (if electric, heat to 325°F.) Grease lightly with oil. Combine eggs, milk and muffin mix in medium bowl, stir just until large lumps disappear. Batter will be thin. For each pancake pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until pancakes begin to look dry around the edges. Turn, cook 1 to 2 minutes or until golden brown.
2. Cool slightly. Spoon whipped cream or sour cream down center of each pancake, top with blueberries. Roll up. Place on serving plate and sprinkle with confectioners' sugar.

My pancakes are the best however not very cheap in calories. I always add 2 T of crisco oil to the batter and I make the batter thinner that usual but not runny. Also I get the pan hot than add crisco oil enough to cover the bottom with each set of pancakes. The edges are crispy. I start with Aunt Jamima pancake mix or Bisquick... yummy

Two things.
1)Mixing the melted butter into the liquid ingredients where the butter hardens when it is stirred into the cold milk and egg mixture. Make sure you are whisking to get hundreds of tiny butter bits that will ultimately melt into the flour when the pancakes are made
2) Do not overmix the batter. There will be lumps. Mix only until combined with a spoon. Don't use a whisk or god forbid anything electrical to mix the batter.

My husband always likes mine. I use the recipe below. I add a little more milk because we like them a little thinner. But that will be up to you. Don't get the griddle too hot or they will burn and be raw inside. When the pancakes bubble on one side then you can turn them and they won't be too runny to flop. Use some oil on a nonstick cooking pan. I usually just put some on a paper towel to smear on the pan.
1 cup flour (all purpose)
1 cup milk (or can use buttermilk)
1 egg
1/2 tsp. soda
1 tsp. baking powder
1/2 tsp. salt
1Tbs. cannola oil
mix dry ingredients together add egg and milk and whisk by hand until blended. let stand for a few min. then pour unto a griddle on about med. high setting. Adjust as necessary.

If you still want to use the box for time's sake, add something like bananas or chocolate chips.
Short on that something special? Work your skills to avoid burnt pancakes.
