Mix parmesan and swiss cheese I make mine different because im not a big fan of ricotta and other types of bitter cheeses. You might also want to cook some hamburger meat or some ground sausage in together and stuff them in the ravioli too. Itll taste good with alfredo sauce but I personally would make mine with homeade spagetti sauce!!!

not having any ricotta certainly makes it a challenge, but ravioli combinations are endless. I have stuffed mine with a mixture of sauted wild mushrooms and mozzarella, squash, spinach.....whatever you can think of. The important thing is that your filling is not too liquidy. So if you shred a bunch of different cheeses and toss in some herbs, I don't know if I would add any eggs. Just place the mixture in the dough--it is ok if it is loose because it will be all tucked inside of the pocket anyway. I don't add eggs to my fillings and they turn out just fine.

I don't think I would make cheese ravioli to put in a garlic alfredo sauce. If you have some ground meat or sausage, you could brown it with the herbs and use it to fill the ravioli.

You better check Food Network, esp. Gaida's "Everyday Italian" show OR Alton Brown's "Good Eats." I've seen both make some killer-looking stuffed pastas and keep meaning to make them myself.
You can either pick a show and peruse all recipes, or type "ravioli" or "tortellini" in the search box and look for recipes by those 2 chefs.
