Spaghetti is one of dozens and dozens of varieties of pasta. That's all it is. It is not, in and of itself, a dish. It's easy enough to make -- a good recipe for spaghetti consists of just flour, salt, egg, and water. But you're probably better off buying some already made and dried and cooking it. Which raises the question: what would you like to eat with or on your spaghetti? Something in a tomato sauce? A cream sauce? Simple olive oil? Be more specific.

Sauce:
1 lg can crushed tomatoes
1 lg can tomato sauce
1 12 oz can beer
1 c. water
1 tbs parsley
1/2 tsp. garlic powder or 2 cloves minced
1/4 tsp Italian seasoning
1/8 tsp thyme
1/8 tsp marjoram
1/4 tsp basil
2 tbsp sugar
crushed red pepper flakes to your taste
salt & pepper
Place all in large pot and bring to boil, reduce heat and simmer 3 or more hours. [the longer, the better]
Sauteed diced green bell peppers and/or onions, may be added, as well as mushrooms.

Meatballs:
2 lbs ground lean ground beef
3/4 c italian bread crumbs
1/2 c grated parmesan cheese
2 eggs
1/4 to 1/2 c milk
1/4 c parsley
1/4 tsp. garlic powder
dash of italian seasoning
dash of crushed red pepper
dash of nutmeg
Mix all spices with bread crumbs and cheese, beat eggs and add. Add ground beef and mix, slowly adding milk. Roll into balls the size you prefer and place on cookie sheet. Bake at 350, turning occassionally until browned on all sides. Usaully 20 to 30 min. Add to sauce and let simmer.

If you're looking for a good tomato and beef sauce, here's how I make mine (and I learned from my mother who was an excellent cook!)

1 # lean ground round beef
1/2 green pepper - diced
1 yellow onion - diced
2 cloves garlic - minced (or equivalent powder or granules)
(1) 28 oz can tomato sauce
(1) 6 oz. can tomato paste
few drops Tabasco hot sauce
2 tsp. dried basil
1 to 2 tsp. dried oregano
1 Tbs. dried parsley
1 Tbs. sugar
1 tsp. salt
1/2 tsp. ground pepper
1 bay leaf

In a dutch oven or large skillet with lid, brown ground beef, pepper, onion and garlic over medium to medium high heat, "chopping" beef with your spatula. Add balance of ingredients; stir well then turn down to low and simmer with lid on for a couple hours stirring occasionally. Remove bay leaf before serving.

Cook your pasta as directed on package. Drain. Serve topped with sauce and grated parmesan cheese.

Enjoy your spaghetti! Any leftover sauce freezes well - just leave room at top of container for expansion! I always make about 3 times this much and keep it on hand in my freezer in pints and quarts.

I don't have specific measurements, I normally just add it all together. But I usually saute garlic and onion together, chopped finely, and then add a couple cans of crushed tomatoes and one small can of tomato paste. Season with salt, pepper, and italian seasoning, and serve with lots of fresh chopped basil and garlic bread over your favorite pasta. If you want a meaty spaghetti, you could add meatballs, or cook up some ground beef and drain before adding the onion and garlic.

Go to a very good market and buy Muir Glen Organic Spaghetti sauce. Warm up and add or do not add meat as you desire. Boil up some whole wheat semolina spaghetti pasta al dente, and serve.
