Please give me step by step process of Indian Mutton Birayani Cooking process, inclduing the exact amount of oil, nuts, sault, mutton etc.

INGREDIENTS
1/4 cup ghee (clarified butter)
20 whole cloves
9 whole cardamom pods
5 bay leaves
1 medium onion, chopped
5 small green chile peppers
2 tablespoons ginger garlic paste
3 pound mutton, cut into pieces
1 1/2 cups plain yogurt
1 teaspoon salt
6 fresh curry leaves (optional)
3 cups uncooked jasmine or white rice
4 1/8 cups water
1 sprig cilantro leaves with stems



DIRECTIONS
Soak rice for 30 minutes in enough water to cover; then drain.
Meanwhile, heat ghee in a large skillet over medium heat. Stir in cloves, cardamom, and bay leaves. Then stir in onion, and cook until soft, 6 to 7 minutes. Stir in chile peppers and ginger paste. Stir in yogurt, salt, and curry, and then place mutton in pan. Cook for 20 to 25 minutes, stirring occasionally and turning the mutton pieces, until only about 1 cup of liquid remains.
Mix in rice, water, and cilantro. Bring to a boil. Reduce heat to low, cover, and cook for 20 minutes. Check rice after about 12 minutes; if it is dry, add 1/2 cup water, and continue cooking.

if there is to be alot of drinking on new years eve, i dont think biryani is going to be a great compliment, it would add way too much heat to the stomache. i've never used nuts in biryani, and i dont know the exact proportions, but this is how my family makes biryani.

first off you need two pots, in one add the amount of water proportional to the cups of rice needed and a few cardamom pods, a few cloves, and a few cinnamon sticks. bring the water to a boil. then add rinsed basmati rice to it and cook until rice is well cooked and soft.

wash the meat and marinate it with a good amount of chili powder, some tumeric powder, a good amount of salt, garlic-ginger paste (which can be found in indian stores or you can grind garlic and ginger together in blender with some salt), oil (vegtable or conola), yogurt, and a packet (or two depending on how much you make) of shan mutton biryani spice mix (which again can be found at an indian store). you can do this before you start on the rice. then in the other pot, add oil, black cumin, and whole black pepper and let the oil warm. then add the meat and some fried onions and cook until meat is cooked and tender.

then in a seperate bigger pot, add the meat to the bottom of the pan, then layer the rice on top, and put some ghee/butter/crisco on top of the rice. next, warm a cup of milk (do this in a tea cup in the microwave for about a minute) and add some strands of saffron, and a few drops of orange food coloring. pour the milk mixture over the rice, place lid on pot, and put in oven for about 25-30 min.

serve warm with a yogurt chutney. also, mix the rice and meat together a bit before serving. this is a hyderbadi/south indian way of making biryani, which is more flavorful. another note, i've never actually made biryani myself, but i watch my mom all the time, and this is what i remember from it, you could always just buy a pack to shan biryani spicemix and use the recipe on the back of the box. hope this helps, good luck!
