If you are absolutely sure that you don't want to play PS2 games on your PS3 and you want to save 100 bucks, then get the 40 gb. 40 gb is plenty of space for saving games, demos, trailers, etc. Besides, if you run out of space, you can use an external hard drive, put in a new laptop SATA hard drive, or delete stuff to make room. Once you buy an item, it's yours to keep and you can download it as many times as you want.
Personally, I would stick with the 80 gb because of the backward compatibility. It's better to have and not need than to need and not have. There might be a PS2 game that you want to play and unless you have a PS2, you're screwed if you get the 40 gb. With the 80 gb, at least you know that you can play PS2 games on it.

This question is an often one, so that's my cut & paste answer:
1). 20GB has no chrome trim, no memory card reader and no wi-fi. Not manufactured anymore. Has the best backwards compatibility with PS2 games due to Emotion Engine (PS2's CPU) and Graphics Synthesizer (PS2's GPU) installed.
2). NTSC 60GB has the same backwards compatibility as 20GB version, also has memory card reader and wi-fi. Has a chrome trim.
3). 80GB - extended memory, but reduced backwards compatibility with PS2 games, it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played. Available only in NTSC regions.
4). 40GB - can't play PS2 games at all (all PS2 chips were removed), has 2 USBs instead of 4, no memory card reader, has wi-fi. Avalable in black and white colors. White is on sale only in Japan. Uses 65nm technology (lower power consumption). Improved cooling system. It's the latest version. 40GB doesn't support SACD (Super Audio Compact Disc).
5). PAL 60GB - reduced backwards compatibility with PS2 games. it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played.
Wi-fi included in all models, except 20GB.
ADD: Regarding the memory - on my 60GB I have 20 demos, 5 PS3 games, 1 PS2 game, a couple of trailers, OS takes around 5GB . 29GB still free.

If you are an avid gamer I don't suggest the 40 GB. Heavenly Sword requires a minimum of 2200+ MEGA BYTES not KB. That is a LOT of memory required and that's only the min. requirement. If you're not going to play that many games.. the 40 GB is ok, but if you plan to own a lot then get the 60 or 80..

80 g because 40 has no backward compatibility. the 80 g is like three systems in one, plus 80 has SD slots and 4 USB ports.

The 40GB PS3 can NOT play PS2 games (though it can play PS1 games), has a 40GB hard drive, 2 USB ports, and no flash card readers.
The 80GB can play most PS1/PS2 games, has an 80GB hard drive, 4 USB ports, and flash card readers.
Each game will take up different amounts of space on your hard drive, most games though take up around 256MB on your hard drive, which isn't noticeable at all. The hard drive is more to store content such as movies, music, and pictures, not only game saves. Example; I have 10 full length movies and 26 game trailers on my PS3, and I still have tons of space.
