I want to put ahi in it, but I don't know any good recipes except one and it's kinda hard to duplicate. I don't usually put whole ahi in my sushi, so I'm kinda at a loss here.

I already know how to make sushi, I just need some ideas on what to put inside. The ahi is unseasoned, by the way.

You know what's funny, smdiner, that recipe I was talking about that was kinda hard to make is very similar to yours. It calls for smoked salmon, ahi, and avacado in the roll, but then it's battered and deep fried tempura style. It's really good.

I was actually thinking about using a wasabi aioli sauce, which is wasabi, mayo and honey to taste. Thanks for the ideas guys ^.^

Ok, I know how to make sushi, I've done it before and all I need is an idea of what to put in the middle. I know how to make the rice, chop the veggies accordingly, season everything, I just don't know what to put in the middle.

And yes, honey. Wasabi aioli is really very good. I got addicted to it when i worked at a restaraunt that served it. It's only a little mayo, and honey to taste. A little sweet, a little kick, it's the best.

This one is with salmon but can easy be replaced by ahi- add wasabi/mayo mix on top of ahi (half/half portioned spread)

INGREDIENTS
2 cups Japanese sushi rice
6 tablespoons rice wine vinegar
6 sheets nori (dry seaweed)
1 avocado - peeled, pitted and sliced
1 cucumber, peeled and sliced
8 ounces smoked salmon, cut into long strips
2 tablespoons wasabi paste


DIRECTIONS
Soak rice for 4 hours. Drain rice and cook in a rice cooker with 2 cups of water. Rice must be slightly dry as vinegar will be added later.
Immediately after rice is cooked, mix in 6 tablespoons rice vinegar to the hot rice. Spread rice on a plate until completely cool.
Place 1 sheet of seaweed on bamboo mat, press a thin layer of cool rice on the seaweed. Leave at least 1/2 inch top and bottom edge of the seaweed uncovered. This is for easier sealing later. Dot some wasabi on the rice. Arrange cucumber, avocado and smoked salmon to the rice. Position them about 1 inch away from the bottom edge of the seaweed.
Slightly wet the top edge of the seaweed. Roll from bottom to the top edge with the help of the bamboo mat tightly. Cut roll into 8 equal pieces and serve. Repeat for other rolls.

Cucumber or avacodo and make a spicy mayo sauce. Try mixing horse raddish an mayo with a little chilie powder.

the key is your rice,and freshness of your meat
seasoning the rice is critical.it is NOT just rice vinegar,but also sugar and salt.1cup rice vin.+2 oz sugar+1 oz table salt.
try mayo and sambel oelek inside them.
wasabi and mayo ,yes,honey??
