I can't use any type of alcohol in food, but i cook a lot of different types of dishes that use alcohol - like a half cup of wine in a chicken dish. I would like to still make them, just WITHOUT the alcohol, so how do i do this? Do i just replace it with something like broth? Or do you have any other suggestions....of course i could just not make the recipe, but that sucks.
help? Thank you =)

happylady: yea thats wut i thought, but apparently not all the alcohol is evaporated out. and i cant have ANY in my food, so unless its 100% out, i cant do that.

Also, what about sweet dishes...like pears stewed in wine or sumthing? Would you just replace that with juice and get similar results?

you can replace any wine with juice,

for rum, amaretto, brandy and other and other liquors you should use water for liquid equivalence and for taste you can get a distiled flavor they usually have in cake shops and places that sell bakery goods, normally 3 drops of flavor will equal 1 cup of liquor

Never ever cook with alcohol if you are Muslim. If this is the reason, you should never ever purchase or sell it. Even if your a grape farmer and you know the person you will sell the grapes to will use it to make wine it is forbidden. Other then that you can just use non-fermented wines. Like Grape Juice or carbonated grape juice, like champagne.

The closest Halal would be the non alcoholic cider juice, you can find in many supermarkets.

Just keep in mind , that alcohol did not become "Makrooh" until Omar Bno Alkhattab (raws) was reminded not approach Salat whilst under the influence of alcohol in the Qurnic surat : "Thou shall not approach salat whilst drunk" .
In Islam "khamr" is anything that alters the "mind" , hence any boiled "khamr" will not alter the "mind"..
In addition , Allah judge us by our "intentions". The intent to prepare a Halal food reducing to the minimum the alcoholic content is allowable in my humble opinion. Allah ghafur rahim.

When you cook the alcohol boils off first ( at a lower temperature than water boils at) so if you add alcohol it will evaporate out with cooking. You will have the flavor but not the alcohol.
Ok I am not an expert if you want things like brandy or rum you can purchase essences at the supermarket but I am not sure if these essences actually have any alcohol content them selves.

I can't use alcohol either but I use chicken broth or vegetable broth instead. Works fine for me. Even the extract flavourings have alcohol base, well I just checked one that I still have vanilla extract, sure enough, alcohol base.

i do this all the time. =)
you have to mix vinegar with just a little bit of sugar.

dont use alcohol at all, it does not completely evaporate (at most up to 95%!!)

in a chicken dish you the chicken broth instead. If you are baking you can use extracts instead.
