i was watching the food network adn there was an autobiography on there about Sandra Lee, and there was this one clip where she talked about her recipe mango chipotle chicken, and i was trying to find it, but i cant, so can someone please find it for me, or if you cant find it, please post a recipe for some Tasty chipotle chicken with Mango in it.

Chicken Breasts or thights or drumsticks
2 mangos
2 chipotle peppers (the once in the can))
pinch of garlic
pinch of cayenne powder
1 cup hot salsa
1/2 cup honey
dash of salt and pepper
1 teaspoon butter

Bake or fry the chicken meat as usual until tender and browned.

Hand squeeze mango juice into a bowl. In a food processor, mince peppers finely using pulse (be careful not to overprocess; alternatively, mince finely by hand using a knife).
Combine all ingredients in a saucepan. Heat on medium-low heat for about 10-15 minutes to bring out combined flavor.

Pour over the chicken and let simmer for 5 to 10 min.

Glaze:
2 cups honey
1 cup mango juice
1/2 cup light brown sugar
1/2 lemon, juiced
1 (3 to 4-pound) whole rotisserie chicken
2 mangos, peeled and sliced 1-inch thick
Toothpicks, soaked in water for 10 minutes
1 bunch basil, for garnish


Preheat oven to 450 degrees F.
For the glaze: In a saucepan over medium-high heat, combine the honey, mango juice, brown sugar and lemon juice. Bring to a boil and cook until the sauce coats the back of a spoon, about 5 minutes.

Place chicken on a nonstick cookie sheet. Using a pastry brush, coat chicken with a generous amount of glaze. Place mango slices over breast meat to create a zebra stripe. Insert toothpicks to secure slices into chicken.

Bake chicken just until warmed throughout, about 12 minutes. Remove chicken and discard toothpicks. Garnish with fresh basil.
Maybe you could add a little chipotle seasoning to the glaze.

Yo can either add chiotle sauce to mango chicken or add mango salsa to chipotle chicken

Mango Chicken:

INGREDIENTS
4 skinless, boneless chicken breasts
3/4 cup chopped red onion
1 mango - peeled, seeded and sliced
1 tablespoon vegetable oil
3 cups orange juice
3 tablespoons cornstarch
1/4 cup hot water

DIRECTIONS
In a large skillet, brown the chicken breasts in oil till crispy and juices run clear.
Add the red onion to the chicken. Saute for 2 to 3 minutes, stirring often. Add the orange juice, and bring to a boil. When the juice boils, add the mango slices. Turn down heat, and simmer for 2 minutes. Dissolve the cornstarch in hot water; stir into sauce. Stir till sauce thickens slightly.

Chipotle Chicken

INGREDIENTS
1 (7 ounce) can chipotle peppers in adobo sauce
2 tablespoons sour cream
4 skinless, boneless chicken breasts
1 cup sour cream
10 ounces baby spinach, rinsed
1/2 cup chicken broth
salt to taste


DIRECTIONS
Combine chopped chile peppers with 2 tablespoons sour cream. Mix together and spread mixture over chicken breasts. Sprinkle lightly with salt to taste, cover and marinate in refrigerator for at least 2 hours.
Place marinated chicken in an ungreased 9x13 inch baking dish and broil for about 5 minutes (rack should be about 6 inches from the top.) Pour 1 cup sour cream around edges of chicken and turn over chicken breasts. Broil for an additional 5 minutes. Sour cream should be lightly brown on the edges. Move breasts into a separate dish and cover to keep warm. Set aside.
Pour leftover broiled sour cream into a medium saucepan over high heat. Add spinach, broth and salt to taste. Boil for about 1 minute until all melted and mixed together. Pour mixture over chicken breasts and serve.

tropical rice (jasmine rice with only somewhat of dried tropical fruit and nut blend cooked in) could be great. or pineapple cashew fried rice could be good. or you need to circulate classic with black beans. and plantains, using fact the guy above stated. great concept.
