I am making a KOREAN Seaweed soup. I bought the dried seaweed, soaked for 2 hours, drained and place in a pot with chicken broth, minced garlic, some sesame oil and some soy sauce.
It is cooking now, smells good, but I am wondering if ALL the benefits from this soup is in the broth or I have to chew the seaweed ..... They look a little thought to chew.
I am making this because my husband has some problems with his brain (memory loss) and I read this is a great soup to help brain function.

Any advise, will be helpful.

To answer your question, yes, people do eat the seaweed and soup. I believe the benefit of it comes directly from seaweed. If the seaweed doesn't look soft, you might want to consider cooking it bit longer. Don't forget to fry the seaweed with sesame oil before adding water. This truly brings out the best flavor and softens the seaweed.

One tip- before you soak the seaweed, make sure you break the dried pieces into tiny bite size pieces. This makes it easier to eat/chew the seaweed.

I like to eat the soup with rice. I hope this advice helps and good luck with everything!

Chicken broth doesn't sound like Korean to me. Try this: soak the miyok(seaweed) in water. Doesn't need to be two hours, just as long as it looks hydrated is good enough.Then WASH it.(Some claim this makes it more tender later) I mean just rinse it a few times as you rub it together by hand a bit.
Next, add it with beef to a big pot. Boil. Some say not to over boil it, but I think you can't over boil it cuz the slimy softness of the miyok is what you want. If it has any hard "crunchiness", not my style. For meat, I like using the bones with lots of marrow. In America, you can use stew meat or beef ribs or most anything in between. There should be only a bit of beef in a serving. Add salt and Korean beef ta-shi-da to taste. My family argues about whether garlic should be in this soup. Ta-shi-da is beef bullion, but has some msg in it. If I don't use it, my husband will add it himself which is anyway, authentically Korean. It can be bought in a Korean market where you bought the miyok.

Sounds like a great first course. Eat the seaweed, it is full of vitamins for a healthy body. Serve some rice and a few Banchan with it like Cabbage Kim Chee!!! Yum. Or add some Kim Chee to the soup-better yet.

BTW, seaweed is common as part of the asian diet. It is the wrapping around most commonly found around sushi rolls and, of course, the main ingredient in seaweed salad.

I like it.

You usually eat both. But if you are not feeling hungry, it is okay to just drink the broth.

i am a korean myself...

you usually put something like beef, too.

of course you eat the seaweed.

dont forget the garlic.

Yum!, we usually boil it, drain the water off then chuck heaps of butter on it. I love it on toast.

It tastes like spinach to me. (I like spinach). I doubt this will help with memory loss - sounds like an old wife's tale.
