Normally I make garden fresh salsa with tomatoes, tomatillos, carrots, cilantro, onions, jalapenos, and orange juice- but this is too expensive- and the tomatillos and tomatoes from the store taste like crap this time of year. Any suggestions for an alternate salsa (I have garden tomatillos in the freezer) besides salsa verde, or any unique side dishes I could add? I am making frijoles del rancho, and rice, but would like some other ideas.

Yes, we are having fresh corn tortillas, my husband's Tia owns the tortilla factory, so we get them fresh off the machine!

my4sombras- did you know that you don't have to put your chile de arbol on the comal and stink up the whole kitchen?? Put them on a plate in the microwave, cook a couple of minutes at a time till they are toasted. You can clean microwave later w/ citrus (or microwave 1/2 orange. Doing it this way keeps you from choking to death!!

Susan D- thanks for the idea about the red onion- I have had these before (in mexico on the road) and they are awesome, you can almost eat them by themselves!!

One of the things I always make with cochinita pibil and carnitas is red onion pickled in citrus juice. You pour boiling water over the thinly sliced red onion and let them sit for a bit. Then drain, spinkle with salt and pour half orange juice and half lime juice over them, cover and refrigerate overnight. The next day you can serve them with your roast pork. It's authentic and very tasty. Also good to have some queso fresco or cotija and some good corn tortilla and of course a little salsa.
Because the tomoatoes and tomatillos are so poor this time of year, consider making a cooked red salsa.

Well you can make rice ,beans and red salsa using chile de arbol peppers roasted on the comal (griddle) having good ventilation roasting your tomatoes till skin starts to peel or tomatillos this gives it a different flavor (roasted mmm!) put into the blender tomatoes of your choice,onion,garlic, dried chile de arbol not to many they are very spicey,and salt to your taste. blend and you can chop onions and cilantro to make it a little chunkier after your done blending it, you can put it thru the strainer if you like so you don't have skin of the dried chile or leave as is if you have a good blender. You may want to consider making a cooked tomato salsa. Also for a side dish, offer some sort of salad - such as a macaroni salad or potato salad. A pickled salad would also be great. If you're interested in some variations to your salsa, make a cooked tomato salsa and add some finely chopped avocado, tomato, and onion. Just enough to add some chunks, but not so much that it will take over. (Have plenty of chips available!) Best of Luck!

You can make rice to accompany the pig usally that what is accompany in the carribean Island. Arroz con Guandules, black bean, ect.....the recipes for Rice with Guandules is
This is for the sofrito.
1 onion
1pepper
2 stam of celery
4 pieces of garlic
1/3 cup of cilantro
1cube of chicken both
1 tablespoon Adobo Goya (or more to your taste)
1 small can of tomatoe paste
1 or 2 can of Guandules( or whatever bean you like, this will work with any beans.)
Then depanding on how many people you going to feed you measure the rice. If you going to feed 10 people you measure 6 cup of rice and it should be enough for 10. Enjoy!!!

Mexican Rice
PREP TIME 5 Min
COOK TIME 25 Min
READY IN 30 Min
INGREDIENTS
3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth
DIRECTIONS
Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin.
Stir in onions and cook until tender. Stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.

Home made baked beans and corn bread would be good.Also maybe corn on the cob.You can drizzle some lime butter over the corn.All you do is melt some butter and squeeze some lime juice in it.It really brings out the flavor of the corn.Homemade potato salad would be good too. Also good rye bread.
