Grilled and smoked meats (beef,poultry and fish are really good) tend to be more flavorful and have less fat as the fat drips off. You can grill veggies too. Stir fry is really good. The key to authentic stir fry is to put little or no meat and lots of veggies into it. Put it over some brown rice and you will have all the major food groups on your plate. Try smoothies made with plain yogurt+fruit+a little tofu (can't taste it)+ a little toasted wheat germ and you have an action packed breakfast drink to fuel you through till lunch time. I have found that picky eaters tend to be not so picky when they are the ones who prepared the food. My kids are all involved in the kitchen and I don't have trouble getting them to eat. It is the pride of accomplishing something that makes them eat it and enjoy. Beans and rice with a side of corn or other vegetable is a good meal. I live by this one simple rule. If it is not in the basket at the store, then it does not go home. If it does not go home then no one is shoving it don their gob. A relatively quick dinner can be from the freezer. If you make a double batch of everything, then you can freeze it into individual or dinner size portions that can be quickly thawed on the fly or brought to lunch for a healthy meal that did not involve a vending machine. Sometimes it isn't what we eat that gets us either but how much. I bought smaller plates and my kids have to wait 15 minutes to get anything else as that is about how long it takes for your stomach to tell your brain that it is full. You can also give them more veggies as a in-between meal filler and make sure they are all drinking plenty of water as 90% of hunger pangs are really thirst pangs but people eat instead.

Buy a crock pot, it is electric. They are very inexpensive and can be bought at supermarkets and places such as Wal Mart. Be sure to read the booklet that comes with it.
With a crock pot, you put the meat and vegetables/potatoes into the pot in the morning, cook on low all day long, and eat at supper.

Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

You can buy a roasted chicken or two at your supermarket's deli section. They also have all types of salads and vegetables already cooked.
