According to my Better Homes & Gardens Cookbook, 1 cup of whipping cream makes 2 cups whipped. So you would need 1/2 cup.

(I thought I remembered it doubles in volume, but with all the other answers here, I pulled my cookbook to verify.)

1/4 cup of whipping/heavy cream. But this one is a little tricky trying to whip such a small quantity & get the volume. I always make 1/2 or one cup whipping cream. It never gets thrown out.
