Here's a new one to try:
CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1 onion, sliced thin
1 tsp. ground cumin
1 tsp. ground mustard
4 cloves garlic, minced
1 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
1/2 cup sour cream
1 1/2-2 cups cooked rice


Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Mix with rice and place in casserole dish. Bake at 350 for 30 minutes.

I don't remember the exact recipe, but it was delicious.
I added applesauce and uncooked rice and chicken broth and chicken pieces were pre-cooked and browned with a large chopped Spanish onion in a non- stick- fry pan. After browning place the chicken into greased oven dish. Mix two cups of uncooked rice with one cup chicken soup and one can applesauce. Mix the browned onions into rice mixture. Season with a little garlic powder, Pour over chicken in casserole dish. Cover with foil and bake in the oven at 350 degrees F. untill the rice is soft.and liquid has been absorbed.

When I have those days, I open my refrigerator and experiment. Many many wonderful cassaroles, maybe
one not so great from my science projects.

Maybe instead of adding to the cassarole, try just topping the cassarole with crushed stove top stuffing & 2 teaspoons melted butter. Or top with cheese, top with chili sauce or salsa, depends on whatever else in the receipe.

Sliced or diced water chestnuts add a nice crunch to a chicken casserole. Do you use either noodles or elbow macaroni in it? Cheese over the top for the last 5 or so minutes is also nice.

Here 's a couple ideas , leave out the tomato soup for both .

***Use pears &/or apples +winter squash (buttercup, butternut, or hubbard ; acorn would be my 4th choice) + hot peppers
Have made a soup like that, but with turkey, not chicken.
(Another possibility, - do the above with shrimp & scallops , instead of chicken)

Pasta, corn, peas, brocolli etc... anything that has a neutral flavour that wont take over the flavour of the pre-existing ingredients.
Pity you didnt leave a recipe of what ingredients you already use, but I love this recipe

uhh broccoli, hot pepper cheese, cream of mushroom with garlic soup, rice, or penne, perhaps turn it into a mac n chicken casserole with some diced tomatoes very good

My mom makes a really good casserole that has chicken (or turkey) pieces, broccoli, cream of chicken soup, curry powder. It is really good!
