If you have someone who can give you the correct intonation, I would say Chinese. By the way, there are actually two languages which are called Chinese, Mandarin and Cantonese. Both of these rely heavily on intonation. If you use the wrong intonation, you would be speaking a completely different word.
Italian is closely related to Spanish, which you already know. The main reason I decided not to learn the language at this time is that I am afraid it could confuse my Spanish. Of course, that is just my fear. It probably isn't true.
If you want the language that would be the most useful in more places, I would recommend Mandarin. If you are looking for beauty in your language, try Italian.
You already know two other romance languages, so Italian should be easier to learn than either Chinese language.

Chinese.
Since you already have many of the romance languages, it would be easy to be able to figure out Italian. If you were to speak with an Italian, you could figure it out pretty easily as it is.
Instead, branch out with Chinese, which is a completely different language family. That will open a whole new world for you.
My wife speaks nine languages. While she speaks Italian and other romance languages, she can get by in Romanian even though she does not formally speak the language, as could you.
Try something new!

Italian will be supereasy if you already speak Spanish and French. But Chinese would be a lot more useful, and will be more so in the future.

Learn Chinese, because it sounds like you need a challenge. Italian won't be too much of one if you already know Spanish and French, but Chinese has different features altogether.

Since you already have a Spanish background, I would say that you should learn Italian. It's just easier for yourself.
But, if you want to be ambitious, then go for chinese.

A Slavic language might be quality to understand and seeing that you've found out German, you have already got the thought of noun declensions ( that's a gigantic facet of each Slavic language besides Macedonian and Hungarian) and also you realise noun conjugations so I might undoubtedly study a Slavic language subsequent,

You have to think about it. If your job involves a lot of traveling, you may need to learn both eventually. Or, think about the countries that speak Chinese/Italian. What countries would you more likely visit. Me myself i would take Italian before Chinese because i wouldn't go to china in my future. I think I'd rather go to Italy. Its all based on what your lifestyle is.
