I bet you are referring to Hindu and not hindo(???)..
I do not recall anyone other than a human declaring themselves
as one....
Hindus are the people mostly from sub-continent India.

I would guess this might signify a witch who worships or invokes deities associated with the Hindu pantheon. Tantric signs, symbols and/or rituals might also be involved though personally I see little need for them.

The definition would depend much on the practitioner.

Actually, Hindoo is an archaic way of spelling Hindu, from roughly the 19th century or thereabouts. Superheroes like Sir Richard F. Burton used it. That makes it good enough for me!
