I like to do my Corned Beef in the crock pot with beer as the liquid.....cook it on high (4-6 hrs) or low (6-8 hrs)........add the veggies of your choice 2 hrs before you plan to serve it.....carrots, potatoes and cabbage is the "traditional" veggies that accompany corned beef, but I also throw a quartered onion just for more depth of flavor........I usually do 2 at a time (I have a large crock pot) as I LOVE corned beef sandwiches and corned beef hash (NOT that crap out of the can, but made with leftover corned beef and potatoes)

Hunter Fi....How stupid was I to forget the mighty Reuben??? I love a good Reuben.......YUM....Thanks for reminding me!!! (Got a killer panini grill for Christmas, last night we used the leftover Prime Rib that we had for Cmas as Beef and Swiss paninis w/horseradish sauce they were TO DIE FOR......Best panini I've had since in Italy.....

Beer put into the pot with the beef adds a great flavor. I would suggest that the veggies that accompany the Corned Beef be cooked separately. For health reasons you will not retain any of the fat from the beef in this way, and most people prefer veggies (especially cabbage) less cooked than they would be over the period of time needed to cook the beef. I sometimes cook the beef the day prior to serving. Put it on a plate in the refrigerator, then slice it when cold and reheat it via a shot in the microwave. This way you have some control on how much you want to heat up at any time. Another note is that Corned Beef shrinks by about 1/3 when cooked, so plan buying a larger piece or pieces than you calculate for serving sizes. Once cooked, it also freezes well....Can you say 15 minutes from freezer to Rueben Sandwich? MMMM.

On low... about 6 to 8 hours. I wouldn't go more than 8 hours in a slow cooker. Note: Even with a slow cooker you can overcook meats especially if you go over 8 hours.
