Kidney is similar to liver, but more tender and less strong tasting. Yum. And brain makes a nice spicy sausage, scrapple. What do you think pepperoni is made from?

People will eat just about anything. Especially the Chinese. You usually won't see brains, or stomach etc on menus, you'll see sweetbreads, tripe and other nicer sounding names for the organ meats. Hint: stay away from the Rocky Mountain Oysters!

There are quite a few other countries in the world where their menus are full of entrails, brains, etc.etc.etc.

Got to admit, some of it sounds pretty good. But, don't tell me what it is until I have tasted it, please. hehe
