What is the best steak for steak enchalads? (With red sauce).

What is the best way to cook it?

I know in the restaurants it comes out nice and tender. What do I use to home and how do I cook it?

The steaks ( I like to use a medium priced sirloin for this purpose) are seared then cut into manageable pieces and steamed or braised in either beef broth or the red sauce (enchilada sauce) till tender; In a small skillet, heat some oil (corn, vegetable, peanut, etc) and dip corn tortillas in the oil for about 10 seconds.....transfer to a large plate and add the beef......add cheese if desired......roll and place seam side down in a greased baking dish......when you're done rolling the enchiladas, pour the red sauce over the top and top with shredded cheese........Place in a preheated 400F oven for about 20-25 minutes, till bubbly and hot throughout.......Enjoy!!!

I like to top mine with more cheese (more is better in this case!!) chopped lettuce and some hot sauce.......but serve however you prefer.....

Skirt Steak! That's what restaurants use.

yes flank or skirt
its the best as well,you are cutting it across the grain anyway so tenderness is not a issue.plus its very flavorful with nice amount of fat.sirloin too lean,tenderloin too expensive.
