" chicken-fried steak is a variant of schnitzel. It is popular in the Southern US, perhaps especially in Texas. The dish is a cut of beef that is pounded until very thin, breaded and fried. The cheapest, least tender pieces of beef are usually the ones that are used for this dish, since the pounding softens the meat and the majority of the flavor comes from the fried coating and the cream-based gravy that the dish is inevitably smothered in. Chicken steak is a piece of the breast meat pounded out to an equal thickness which is usually breaded and fried.
Chicken fried steak is a piece of beef (usually round steak) which is pounded with a meat mallet to break down the fibers and even out thickness. It is coated with seasoned flour, then egg wash, then bread crumbs and pan fried quickly to a golden brown. Traditionally served with mashed potatoes and a cream gravy.

********CHICKEN FRIED STEAK
2 pkg. tenderized cube or round steak
1 c. whole milk
1 1/2 c. flour
2 tsp. salt
1 tbsp. black pepper
1 1/2 - 2 c. cooking oil
Good heavy skillet
I start heating my skillet first and when it gets warmed up (7 minutes), I add my cooking oil and let it heat also. While that is heating up, I get the steak ready, pound each steak with the side of a mallet or palm of your hand until very thin. Place steaks (2 at a time) in shallow dish containing milk. Next, mix the flour, salt and pepper in a shallow dish. Remove steak from milk, dredge in flour mixture, place into skillet and brown on both sides. Continue cooking until all steaks are cooked.
CREAM GRAVY:
1/3 c. hot steak drippings
1/4 c. flour
2 c. milk
Salt and pepper to taste
I use another skillet, let it get hot and add steak drippings, flour, salt and pepper. Stir with wire whisk until blended. Next add 2 cups milk, continuing to stir until gravy thickens. Serve with chicken fried steak and mashed potatoes.

Chicken Fried Steak.. Only in America!
First you have to ask why.. but they take a damn fine piece of steak and crumb or bread it as you would a piece of fried chicken, and shallow fry it in fat, often lard, or some other fat, with pork fat, and butter added (for flavour), till the coating is crispy, and the steak is (Please God) still meduim rare. I only tried this once in the States, but it came medium well. (A crime against good beef in my book). Usually accompainmented by mashed potato, green beans and gravy.. To me it seemed like a monster Wiener Scnitzel, but always worth trying something you've never had before.

Gravy is a "must" with Chicken Fried Steak. Also Texas Toast, mashed potatos and maybe an ear of corn. Yum, yum!

Are you refering to Chicken Fried Steak ?

A cubed-steak is dredged in spiced flour, egg, and then flour again... it is then fried in oil or bacon-fat. Normally served with mashed potatos and corn.

Chicken FRIED steak is a beefsteak, usually a ground round, pan fried like fried chicken.

Good with gravy and biscuits.
