Although, I could put argument at all of your questions, I will only address this part (due to the fact that I have to leave soon):
"At the end of the first book of Genesis, God created humans all at once, both male and female. Later on, he created humans again, but this time he created Adam first and then made Eve from one of Adam's ribs after Adam named all of the animals. How can these both be true?"
The first chapter of Genesis is an overview of the entire creation. The second chapter is a detailed view at the creation of man. He didn't create humans again, the Bible is just focusing more on the creation of man.
It's like...
"He created item number 1."
"He created item number 2."
"He created item number 3."
"Now let's go back and explore in detail about how he created item number 3 and what came of it."
It's not a separate account but a parallel account of the events.

1. God IS light. He can diffuse light throughout the entire universe.
1Jo 1:5 This then is the message which we have heard of him, and declare unto you, that God is light, and in him is no darkness at all.
2. The " firmament" is the sky. It has nothing to do with the shape of the world.
Gen 1:8 And God called the firmament Heaven. And the evening and the morning were the second day.
3. Plants can survive for 24 hrs. without sunlight. They go twelve hours EVERY DAY wiyhout it.
4. The first CHAPTER ( not book) of Genesis gives an overview of the six days of creation, chapter two fills in some details as to the events that occurred on day six in the Garden of Eden. God made one more of each animal in Adam's presence, so there there would be no question as to who the creator is.
5. The Bible makes perfect sense if you just take the time to read it.
You obviously didn't come up with these questions on your own by reading the Bible. You're just parrotting something that you heard or read somewhere.

Good Questions. You are correct, the heavenly bodies in our solar system were created on the 4th day.
This whole mess we are in it seems was not intended to be the way it is as we know it. We were intended to live eternally in His perfect creation, it is my belief God wants to restore us and this world to the original plan. Revelation tells us about the New Jerusalem that will be brought to earth.
Rev 21:23 And the city had no need of the sun, neither of the moon, to shine in it: for the glory of God did lighten it, and the Lamb is the light thereof.
It seems to me that the original creation would be no less lighted by the presence of God. God is light. Jesus is the Light of the world.
The 3rd day yes God did create plant life. If you remember who it is who is creating, the life giver, I don't think there it would be a problem for one who just spoke the world into existence to sustain plant life for 1 day with no sunlight. Be that as it may, There have been days of total darkness in the polar regions as we know and yet plant life still is sustained. Again, I dont think its that much of an issue.
Okay. About the creation of man 2 times. This is somewhat of a misnomer. In the "first" account, it was simply and overview, a statement of fact that God created male and female. The "second" account is just giving the details to the statements made that there was a creation of man and woman. This is common in Hebraic type writing, to touch on the highlights and then give detail on certain points.
And to your last question about the God of the Bible. I think id write a book if i started on this one ha ha but I think its safe to say that the historicity of the Bible alone says how accurate it is not to mention the 100% accuracy of the prophecies. So if it is that accurate then the one who "commissioned" its witting is probably true as well.

The light during the first 3 days was God.
This is not saying the earth is flat look it up in a different Version.
God was the light and power at which they survived.
In chapter two The bible tells us of Adam and Eve created at different times, before that it was just going over the creation of everything.
The God of the Bible has a lot of proof on his side, just look at history, science, and the bible.

1) Light comes from God himself.
2) Some scientists believe the firmament was a water canopy that later rained down and created the global flood. It has nothing to do with the shape of the earth.
3) Plants can survive a day without sunlight. I've had plants shipped to me that have been shut up in boxes for longer than that and were fine.
4) The first book of Genesis is an overview. After that it goes into detail.
5) God of the Bible. I can only say this for sure because I know him personally and he is who he says he is.

From an article I wrote:
Many state that if the Big Bang were true, then it is in direct conflict with the Bible's six day account in Genesis. Yet in Hebrew, "day" means "yom", which has been translated to mean a specific period of time and not to be confused with a solar day. (39) Christian tradition also agree's with this concept, as pointed out by the first century writers; Philo and Josephus. (40) Other writers include: Augustine (41), second century apologist and martyr; Irenaeus, third century apologist; Origen, fourth century bishop of Caesarea; Basil, thirteenth century; Thomas Aquinas. (42) In the twentieth century, this position was held by C.T. Scofield, A.H. Strong, and Gleason Archer.
There are also scripture references that gives a general sense of a time consuming process; including ages:
Psalm 104
Proverbs 8:22-31
Ecclesiastes 3:11a
Micah 6:3
Habakkuk 3:6
Genesis was not written specifically about when and how the universe was created, but who created it! Psalms 111:2 states "Great are the works of the Lord; they are studied by all who delight in them!"
It would be deceptive of God's character to create a universe that would appear to be billions of years old and yet be only six solar days. Starlight can only travel so fast. For the span of the universe to be thirty billion light years across; the universe must be pretty old! This suggestion does not necessarily mean that the biblical concept of Genesis would agree with Darwin's evolutionary dogmas either. However, science and the Bible agree that planets and other animals were created first and that man and mammals were created last.

All I can now prove to you is that the God Yahweh wrote down enough scientific evidence of His knowledge of microbiology and other fields of advanced science including evolution in The Bible that wasn't part of human knowledge at the time it was written to fill a public library. You can then can come up with your own conclusion on who or what God is. Which the scientific evidence will point to as a "Scientist".

I know there are a lot of holes in the biblical creation theory. Confusing contradictions, things that don't make sense. However it makes just as much sense as Darwin's explanation of the origin of life, and there are many devout followers of that as well. Honest people would say "I don't know how the universe was created or how life began. Ignorant bigots would ridicule people who have a different opinion on the creation of life than the opinion held by them self which is just as unprovable and just as likely as wrong

YHVH is light. Because He was hanging around, the sun was not needed for light. One possibility is that there was a metallic Hydrogen canopy (water) above the atmosphere. When this broke, it came crashing to earth, bonding with oxygen and freezing the woolly mammoths found in the north land. That cut the atmospheric pressure in half, and the oxygen percentage by half, resulting in much shorter lives. The second chapter of genesis is "reiteration"
