How about just asking him if it's too late to change your mind or accept his offer. For example, if he asked you to dinner and you said "no" . . . why not say
"Hey, does your dinner invitation still stand?" If he says "Yes", than you're good to go. If for some reason he says "No", then you can say "Okay, I was just checking" and laugh it off. My guess is that if he asked you out once and you declined, he'll jump at the chance now.
