Suet is raw beef or mutton fat, especially the hard fat found around the loins and kidneys. The melting point of suet is approximately 21°C (70°F) It consists mostly of saturated fat.

The suet used in cooking is a firm white fat which surrounds the kidneys of sheep and cattle.

Usually beef suet is used, I've used both.

It used to be available from the butchers as a lump of fat, which is grated or chopped and any skin or fibrous bits removed before using.
Although you can probably still buy it that way, it's usually sold ready prepared as shredded suet.

Suet...a raw beef or mutton fat from around the loins & the kidneys. It is used for cooking purposes...you can get it fresh at a meat market.
Haggis - Windsor Pudding - Steak & Kidney Pudding - Christmas Pudding. It is used to make the crust , top n bottom. Also used to make dumplings.
Here in the US we also use Lard. Happy New Year everyone!

I don't use suet because I know what it is and it's not healthy for my liking...It is raw beef or mutton fat, especially the hard fat found around the loins and kidneys. It consists mostly of saturated fat.

It is raw beef or mutton fat. My mom and grandmother would mix it with birdseed and hang it from the tree to feed the birds.
