Im cooking tonight and need to go shoppijng in anhour to get some bits. I dont really like spicy food but said I would make fajitas for tea. What else can I do with it to make a mexican platter?? Nothing too complicated or expensive!!!!

some tortillas and stuff with cheese.. bacon or meat and vegs.
some rice and sprinkle in some salsa sauce
some enchallates they are in the frozen section.
nacho chips and some cheese.

Sweet Corn Cake is yummy - Mix a pouch of cornbread mix with sweet creamed corn and bake until it starts to come together and is heated through. There is also a mix from Chi-Chi's in the grocery store for this.

Mexican dips are always good - mix Velveeta and salsa and place in a crock pot on low heat. Serve with chips.

Guacamole also is a great dip - you can buy some good premade ones in the freezer section.

Refried beans are good - I use the Old El Paso fat free ones - just heat and sprinkle with cheddar cheese.

Get some flour tortillas, onions bell peppers, salsa, cheese, guacamole, sour cream, fajita meat etc... Chop up the vegetables and grill them with the meat. Heat the tortillas over the skillet. Put everything out and let people create their own fajitas.

quesadillas made with shredded cheese, sour cream, salsa, re fried beans on the side that people can add them selves or you can add while preparing quesadillas.
1.)Get the large tortillas
2.) put a little margarine on a griddle or skillet place tortilla on melted butter. Put some shredded cheese of your choice ( I use Sargento's Bistro chipotle pepper cheese) on the tortilla,
3.)with kitchen knife spread re fried beans on other tortilla, Place on top of cheese tortilla and brown, flip and brown other side until golden.
4.) slice quesadilla into quarters, and place on platter with other ingredients.
We eat these whenever we're just not sure what to fix because they are so fast and easy and really pretty yummy.

Chopped fresh cilantro to sprinkle on anything. It makes a huge improvement, unless you don't like cilantro.

Just put out all the ingrideients to the burrito so everyone can make their own burritto to their liking.
