Peter is first used in Acts 1-12, then the Lord's most predominate evangelist (in all Scripture) is Paul, by the Spirit of the living God, who also is available to those that obey Jesus (Act 5:32).

(Acts 9:20) "And straightway he [Paul] preached Christ in the synagogues, that he is the Son of God."

(Acts 9:27) "But Barnabas took him, and brought him to the apostles, and declared unto them how he had seen the Lord in the way, and that he had spoken to him, and how he had preached boldly at Damascus in the name of Jesus."

(Acts 13:1-2) "Now there were in the church that was at Antioch certain prophets and teachers; as Barnabas, and Simeon that was called Niger, and Lucius of Cyrene, and Manaen, which had been brought up with Herod the tetrarch, and Saul. {2} As they ministered to the Lord, and fasted, the Holy Ghost said, Separate me Barnabas and Saul [Paul] for the work whereunto I have called them."

(Acts 14:1-3) "And it came to pass in Iconium, that they [Paul and Barnabas] went both together into the synagogue of the Jews, and so spake, that a great multitude both of the Jews and also of the Greeks believed. {2} But the unbelieving Jews stirred up the Gentiles, and made their minds evil affected against the brethren. {3} Long time therefore abode they speaking boldly in the Lord, which gave testimony unto the word of his grace, and granted signs and wonders to be done by their hands."

(Acts 17:2-3) "And Paul, as his manner was, went in unto them, and three sabbath days reasoned with them out of the scriptures, {3} Opening and alleging, that Christ must needs have suffered, and risen again from the dead; and that this Jesus, whom I preach unto you, is Christ."

(Acts 17:16-17) "Now while Paul waited for them at Athens, his spirit was stirred in him, when he saw the city wholly given to idolatry. {17} Therefore disputed he in the synagogue with the Jews, and with the devout persons, and in the market daily with them that met with him."

(Acts 19:8-11) "And he went into the synagogue, and spake boldly for the space of three months, disputing and persuading the things concerning the kingdom of God. {9} But when divers were hardened, and believed not, but spake evil of that way before the multitude, he departed from them, and separated the disciples, disputing daily in the school of one Tyrannus. {10} And this continued by the space of two years; so that all they which dwelt in Asia heard the word of the Lord Jesus, both Jews and Greeks. {11} And God wrought special miracles by the hands of Paul:"

(Acts 20:19-21) "Serving the Lord with all humility of mind, and with many tears, and temptations, which befell me by the lying in wait of the Jews: {20} And how I kept back nothing that was profitable unto you, but have showed you, and have taught you publicly, and from house to house, {21} Testifying both to the Jews, and also to the Greeks, repentance toward God, and faith toward our Lord Jesus Christ."

(Acts 20:24) "But none of these things move me, neither count I my life dear unto myself, so that I might finish my course with joy, and the ministry, which I have received of the Lord Jesus, to testify the gospel of the grace of God."

(Acts 20:26-27) "Wherefore I take you to record this day, that I am pure from the blood of all men. {27} For I have not shunned to declare unto you all the counsel of God."

(Acts 24:25) "And as he reasoned of righteousness, temperance, and judgment to come, Felix trembled, and answered, Go thy way for this time; when I have a convenient season, I will call for thee."

(Acts 26:14-20) "And when we were all fallen to the earth, I heard a voice speaking unto me, and saying in the Hebrew tongue, Saul, Saul, why persecutest thou me? it is hard for thee to kick against the pricks. {15} And I said, Who art thou, Lord? And he said, I am Jesus whom thou persecutest. {16} But rise, and stand upon thy feet: for I have appeared unto thee for this purpose, to make thee a minister and a witness both of these things which thou hast seen, and of those things in the which I will appear unto thee; {17} Delivering thee from the people, and from the Gentiles, unto whom now I send thee, {18} To open their eyes, and to turn them from darkness to light, and from the power of Satan unto God, that they may receive forgiveness of sins, and inheritance among them which are sanctified by faith that is in me. {19} Whereupon, O king Agrippa, I was not disobedient unto the heavenly vision: {20} But showed first unto them of Damascus, and at Jerusalem, and throughout all the coasts of Judaea, and then to the Gentiles, that they should repent and turn to God, and do works meet for repentance."

(Acts 28:23) "And when they had appointed him a day, there came many to him into his lodging; to whom he expounded and testified the kingdom of God, persuading them concerning Jesus, both out of the law of Moses, and out of the prophets, from morning till evening."

(Acts 28:30-31) "And Paul dwelt two whole years in his own hired house, and received all that came in unto him, {31} Preaching the kingdom of God, and teaching those things which concern the Lord Jesus Christ, with all confidence, no man forbidding him."

(Rom 15:18-19) "For I will not dare to speak of any of those things which Christ hath not wrought by me, to make the Gentiles obedient, by word and deed, {19} Through mighty signs and wonders, by the power of the Spirit of God; so that from Jerusalem, and round about unto Illyricum, I have fully preached the gospel of Christ."

(2 Cor 6:4-7) "But in all things approving ourselves as the ministers of God, in much patience, in afflictions, in necessities, in distresses, {5} In stripes, in imprisonments, in tumults, in labours, in watchings, in fastings; {6} By pureness, by knowledge, by longsuffering, by kindness, by the Holy Ghost, by love unfeigned, {7} By the word of truth, by the power of God, by the armour of righteousness on the right hand and on the left,"

(2 Cor 12:15) "And I will very gladly spend and be spent for you; though the more abundantly I love you, the less I be loved."

(2 Cor 13:3-4) "Since ye seek a proof of Christ speaking in me, which to you-ward is not weak, but is mighty in you. {4} For though he was crucified through weakness, yet he liveth by the power of God. For we also are weak in him, but we shall live with him by the power of God toward you."

(2 Tim 2:10) "Therefore I endure all things for the elect's sakes, that they may also obtain the salvation which is in Christ Jesus with eternal glory."

(2 Tim 3:10-11) "But thou hast fully known my doctrine, manner of life, purpose, faith, longsuffering, charity, patience, {11} Persecutions, afflictions, which came unto me at Antioch, at Iconium, at Lystra; what persecutions I endured: but out of them all the Lord delivered me."

(2 Tim 4:1-2) "I charge thee therefore before God, and the Lord Jesus Christ, who shall judge the quick and the dead at his appearing and his kingdom; {2} Preach the word; be instant in season, out of season; reprove, rebuke, exhort with all longsuffering and doctrine."

(2 Tim 4:17) "Notwithstanding the Lord stood with me, and strengthened me; that by me the preaching might be fully known, and that all the Gentiles might hear: and I was delivered out of the mouth of the lion."

That we are told about, probably Paul, but there were MANY more... Once the persecution began and large numbers of Christians left Palestine, and, following Jesus' command from Matthew 28, they went around "making disciples" (more than just telling the story, it is teaching a way of life).

Luke (the author of the New Testament book of Acts, which records the history of the early church) was at times a traveling companion of Paul, so his stories are the ones we hear about in the scriptures.

... There were NO CHRISTIANS during Jesus' ministry. John the Baptizer died before Jesus, so neither of them actually could be considered "Christian witnesses."

Matthew 28:18 Jesus came and told his disciples, “I have been given all authority in heaven and on earth.
19 Therefore, go and make disciples of all the nations, baptizing them in the name of the Father and the Son and the Holy Spirit.
20 Teach these new disciples to obey all the commands I have given you. And be sure of this: I am with you always, even to the end of the age.”

I would say Paul. Before he was Paul he was Saul who use to go around killing Christians. I think his life was a great witness and plus he wrote most of the New Testament.

Probably Paul, as he wrote the majority of the New Testament and witnessed to many, many different places in his travels of the Mediterranean region during his day.
