It is up to them. Many buddhists do not like to eat too much meat. Many monks advise not to eat beef or pork and to eat only small amounts of chicken and fish.
Tibetans eat a lot of pig. They say it is because they used to live high in the mountains.
Though most of monks in Thaialnd used to follow a vegetarian diet, they now eat small amounts of fish and chicken.
Some wats (temple communities) are strictly vegetarian and ask donators not to give meat. Other wats will eat what the people give them. Most people think it is not polite to give pork to the monks.
Many Thai people are vegetarians, but nobody sees it as a problem if you eat beef or pork. Buddhists are not very guilt ridden like many other faiths.

depends on the type of Buddhist and the circumstances the person lives in since maintaining life is a primary duty
most active Buddhists are vegetarian
some even avoid eggs and even dairy products
Not particapting in the killing and suffering of any person or animal is part of ahimsa,nonviolence or causing no suffering or death
Ahimsa "You shall not kill" is one of the 5 Precepts
Many Buddhist monks avoid all expensive and luxurious foods and eat only before noon and beg for food

I'm not sure but just thinking about this question has gotten me hungry I could go for a big 1lb Fuddruckers Burger done Medium Rare with Swiss Cheese,Bacon, Mushrooms and Fried onions. Man I am glad I'm a Christian and don't have any food Restrictions,

There are only 3 types of meat that Gautama doesn't want his followers of his time to consume. Those are
1. Meat of Hear ( You hear that the animal was killed purposely for you )
2. Meat of See ( You see that the animal was killed purposely for you )
3. Meat of Doubt ( You doubt that the animal was killed purposely for you )
Eating only vegetable is not the main sect. Especially for those monks.

Why? Animals slaughtered for human consumption have an encoded memory of their suffering as they died stored in their flesh -- so if Buddhists ingest these farm animals they will 'feel' their suffering, too.
Fish, tuna, salmon, prawns and chickens are okay because they are killed quickly and can not recall pain or suffering.

Meat, although we can if we want! We are not really strictly forbidden anything, we are shown the right path and are left to our devices on how we follow it, we are aware of the consequences of our actions.

Meat and fish. Any previously animate living creatures. (A vegetarian diet is recommended but actually there are no prohibitions for some followers. It depends which school you are in)

coucous and rice... rice & coucous.... coucous'n'rice.....rice'n'coucous..... they decrease it to those so they are able to unfastened the means to think of on too plenty...low protient diets NO MEAT,poultry beef or fish !!!!
