Delete all data and partitions from the hard disk

Delete all partitions and overwrite all sectors on the hard disk.

The first option will just clear the hard drive quickly - but the data may still be recoverable with certain tools. This is the preferred method.

The second option will perform a secure erase as well. It takes a loooong time to do, so only do it if necessary. It will make sure no sensitive data from a previous installation is left in any recoverable form. You really only need to use this method if you're going to give your computer away.

Delete all do not overwrite.
Either will work and it is self explanitory as to what they do.
One erases everything while the other just overwrites.
