Honestly most 35mm slr's are pretty good to learn with. The best ones arent that expensive. I learned alot with an old film Pentax K1000. Other than a needle meter in the viewfinder its fully manual. The needle either said too bright or too dark for your shutter speed. Another camera that taught me alot was a Canon XTi 10 megapixell camer. You could take a shot and then review what the camera did to achieve that shot, shutter speed and aperture etc.. All the major SLR manufacturers can do this so I am sorry to say, I have not narrowed down your choices at all.

Buy the Pentax K1000 with a 50mm f1.4 or f1.7 lens. Make sure the Owner's manual comes with it and READ & STUDY it.

This book will also be very helpful: "Object & Image: An Introduction To Photography, Third Edition" by George M. Craven.

NOTE: If you do decide on the K1000 and buy a couple of extra lenses for it and next year decide to buy a DSLR, your K-mount lenses will mount to the Pentax K100D Super and the K10D DSLR cameras.

Since you already have the Canon EOS 40D... go with one of the Canon EOS film cameras... it will take the same lenses, as the 40D.....
