This is going to depend on if you like garlic or not but this is how I cook a pork roast:
Take 1 clove of garlic and peel it, cutting the "leaves" into medium sized slivers. With a long, skinny knife, cut holes all over the roast and insert the slivers of garlic through out. Pour water into the bottom of the roasting pan about 1-2" deep and add 2-3 beef boullion cubes. Top the pork roast with salt and pepper to taste. (Personally, I use season salt and lemon pepper, but that's up to you). Cook in your oven until center is cooked thru. (Use a meat thermometer for best results).

Here is a rub recipe that I developed a few months ago at work. Mix the spices, rub your pork loin or roast and refrigerate overnight. We served it with an apple gravy.
Doc Hudson's Loin Rub
Ingredients Proportion
Paprika 3 Parts
Cumin 1 Part
Garlic Powder 3 Parts
Mustard Powder 1 Part
Curry Powder 1 Part
Blackpepper 1 Part
Salt 3 Parts
Brown Sugar, packed 6 Parts
Combine all ingredients except brown sugar mix well. Add the brown sugar, crumbling and scattering over the other spices. Mix well.
Rub all sides of the pork loin, marinade overnight.
Roast at 350*F until internal temperature reaches 165*F.
Apple Gravy
Pour the juices from your pork loin/roast into a large skillet or sauce pan. Add enough all-purpose flour to make a thin paste, cook for a few minutes over medium heat.
Add apple juice and a lesser amount of water to thin the roux, stirring to prevent lumping. Simmer until desired thickness is reached.
Carve your loin or roast into slices, serve with the apple gravy over the meat slices.

Easy & delicious.....I use a pork loin,boneless.....generously rub with Dijon mustard......sprinkle with a combination of sea salt,cracked black pepper,garlic powder & dry thyme.....roast at 325 for approx 1 hr & 15 min.....rest for at least 20 min before slicing to allow juices to return to the meat. The pan juices are great drizzled over the sliced meat.

I'm sure which ever recipe you choose from the answers will be great. The way to acheive perfect crackling is by drying the outside well and putting on a generous amount of salt on the skin. hope it helps
