My wifes loves chinese rice I would love to make her some for her birthday, with the ingredients we have on hand, Which are rice, porkroast, steak, shrimp, soysauce, garlic, and most spices please help, she is working till 4:00 p. m. saturday would like to have it done when she gets home.

Chinese New Year Rice
Substitute porkroast for sausage, beef for the other sausage-


PREP TIME 45 Min
COOK TIME 1 Hr
READY IN 3 Hrs


INGREDIENTS
3 cups uncooked jasmine rice
1 1/2 cups water
2 cups dried shiitake mushrooms
3 tablespoons oyster sauce, divided
2 tablespoons soy sauce
2 tablespoons cornstarch
1 teaspoon salt
1 tablespoon white sugar
1 tablespoon red wine
3 links lop chong (Chinese-style sausage)
1 tablespoon sesame oil
1 pound fresh shrimp - peeled, deveined, and diced
1/4 pound cooked pork link sausage, diced
1 bunch green onions, diced
1 cup fresh water chestnuts, peeled and diced
1 1/2 cups frozen green peas



DIRECTIONS
Place the jasmine rice and water in a medium saucepan. Cover and let stand at least 1 hour, until the water has been absorbed. Transfer to a steamer basket and fluff with a fork. Steam 20 minutes, or until tender.
Place the dried mushrooms in a bowl with enough hot water to cover. Soak 30 minutes or until tender. Drain, remove stems, and slice.
In a small bowl, mix 1 tablespoon oyster sauce, soy sauce, cornstarch, salt, sugar, and red wine. Place mushrooms in the bowl, and marinate at least 15 minutes.
In the steamer basket, steam the mushrooms and Chinese-style sausage 15 to 20 minutes. Remove from heat and chop.
Heat the sesame oil in a large wok over high heat. Toss in the shrimp and cook 1 to 2 minutes, until nearly opaque. Stir in the mushrooms, Chinese-style sausage, pork sausage, green onion, and water chestnuts. Cook and stir about 2 minutes. Mix in the rice and remaining oyster sauce. Cook another 3 to 4 minutes. Remove from heat and toss in the peas. Serve when the peas are heated through.

cold pre cooked rice makes for the best stir fry.. so boil up the rice now and put in the fridge to cool down..
and with what ever you have.. (I love shrimp best)... chop up a few onions, some garlic, green pepper if you have, some thinly sliced carrots, cabbage.. or any veggie you have on hand... saute the veggies just lightly for 5 min in large pan, set aside.. saute the shrimp (shrimp cooks fast.. will be done in about 5 min)... then toss in all the rice (like 3 cups of cooked white rice), and toss back the meat and veggies... sprinkle in a couple tablespoons of soy sauce, a dash of ginger powder if you have, and generous dashes of black pepper... if you like a bit of fire.. dash some red pepper powder (small amount).. if you want it more sweet ish... use a couple tablespoons pineapple juice.. cover and let steam 2 or 3 min... *walah* its done...

clean rice. Add spices (those your wife likes) and little salt for taste to rice. Cook rice by stirring rice in a sauce pan with spices, salt and water till rice half cook or water dried up. Don't use too much water or rice would be lumpy. remove rice from pan. Steam cook rice by placing water in pot and half cook rice in a pan above. Don't let water get into rice pan. We want cook rice that is dry, not wet. Use a stand so that water don't get into rice when steaming. Remove cooked rice to let it cool so you can fry it nicely. In a frying pan add cooking oil and stir fry garlic till fragrant. Add in shrimp, porkroast and steak to stir fry with soysauce, not too wet as you have to add in cooked rice now. Add in salt and pepper to taste and fry till rice and ingredients well mix. Typical Chinese fry rice has eggs. You can fry scramble eggs and add into rice. To make it look appetising. Add chopped chillies and lettuce to fried rice. most important thing to remember is don't get too much liquid and your fry would sure be great. Good luck

TIP =make rice one day ahead
tip #2=don't forget it's ,"fried rice" ,so fry the rice in just the oil for a bit,don't add soya to soon or it will burn
