At 25 MPH on a bike, the main factor would
be air resistance.
What's the frontal area?

BTW: A propeller power driven bicycle is too
dangerous an object to contemplate.

The question to answer is "what is mountain bike resistance".

A constant speed means zero acceleration.

Zero acceleration means forces are balanced.

Balanced forces means that "thrust" is equal in magnitude to and opposite in direction of "mountain bike resistance".

Knowing the magnitude and direction of one gives you the magnitude and direction of the other.
