First, go for a more sophisticated paint color, like "portrait tone" by sherwin williams, and paint the ceiling & any trim "interactive cream."
Then get a bedding set with a more mature design, like one of these:

As for the stuffed animals, I think it's ok to have one or two on your bed or your dresser. I'm 35yo and I still keep a couple of white bears on my bed. The rest you can put away in the basement, or you give them to other children in your family (sisters, cousins, etc) or give them to Goodwill.
Put up some poster of cute actors/singers that you like, or if you want a totally grown up room, find some cool framed artwork, like this:

If you want to focus your decorating, you could pick a theme, like African, World Travel, Baseball (or whatever sport you like), Autumn, Dancing, whatever, and then find pictures, knick-knacks, curtains, bedding & lighting to match that theme.

ok, to get rid of the stuffed animals, just put them in a space bag and put them in the attic. when you grow up and have some kids, give the animals to them. umm, make the walls what ever color you want. maybe some tropical violet, green, the possibilities are endless. mabye do some dots on the walls or something. you could pick out some wallpaper instead of making a mess with painting. it's your room, you do it how ever you want it.

Put a small chest of drawers in your closet for clothing storage.
Buy some protective plastic cases for some of you valuable stuffed animals and arrange them in a simple, yet modern pattern. Put a jar of roses on your bedside table.
Paint your walls a white with pink accent wall, and put multicolored and pink accents throughout the room.

2] get rid of all kid posters - replace with more teen or young adult art
3] replace pink, lavender - go for rich jewel tones like ruby, emerald, sapphire, amethyst, and gold or silver
4] be sure bedding and curtains are mature enough - add throw pillows to match in velvet, satin, embroidery, crochet

Do you like muted colors? Earth colors, like browns, wine reds, sage greens, blacks, cream, etc
You might consider an Asian style...simple lines, earth colors, candle garden, sort of Zen feel. My whole house is like that.
