Must be a misprint. It's scalded, no exceptions. Bring the milk just to the boiling point, you'll see a skin start to form on top.

Yell at it at tell it not to do that any more (tee hee). Just kidding. It was just a typo. It is scalded milk. Don't forget to stir constantly to avoid burning it.

maybe the cookbook was Southern, or something. They call things a little differently, but i'm sure it's the same thing

bring the milk to a boil.till it bubbles.use medium heat so it doesnt burn
