Gosh I would just use cream. (whipping cream). You may have trouble getting your sauce to thicken up if you just use half & half (which indeed is a mixture of whole milk and cream). I cook quite a bit of Italian and quite a bit of cream sauce style stuff like alfredo and you really need to use the cream to get the right consistency.

You can make carbonara with either heavy whipping cream or half-n-half. It's pretty rich anyway with the eggs, cheese, and fats you add. I like it with half-n-half because it seems to go further ... cover more pasta ... last longer. :)
