Black jack is the easiest to learn and has the best odds. Roulette is easy also but I think the odds are much more in the dealers favor because of the 0 and 00 slot.

If you are looking for the very best odds, I agree with the guy before me. Video Poker played on the right machines with perfect strategy is the way to go. For me personally, I find slots and video poker very boring.
If you prefer to play a table game, blackjack is the way to go. Blackjack played with basic strategy narrows the house edge to about 2%, I believe. So for every $100 you bet, you an expect to net $98 after your session. You can pick up a basic strategy card for less than a buck about anywhere in Vegas. In most places, you can have the card right in front of you while you are playing.
Craps played on a 100x Odds table also offers pretty good odds, but you might have a hard time finding a table that offers those odds. Craps is probably one of the most social games to play, and can be very exciting when someone gets on a nice long roll.
Stay away from roulette if you only want to play games with good odds. If you want to try it, see if you can find a Single 0 wheel. This cuts the house edge in half, to about 3% I think. If the wheel has a 0 and 00, the house edge is closer to 6%.
Probably the best odds for anything in Vegas is to use any and all coupons that are offered to you. Some places offer a coupon for a $5 or $10 match on a single bet. Take these to the casinos with you and use them. It's free money.
Make sure to sign up for the Frequent Gambler Cards everywhere you go. Most of them offer some bonus when you sign up, or at least an entry into a drawing of some type. It only takes a few minutes to sign up for the cards. You build points for every dollar gambled, like Frequent Flier Miles, and you can use them for free meals and hotel stays.

Almost all games have an (often BIG) advantage for the casino.
The only game where you MAY find a player advantage (of about 1%) is SOME video poker machines. First you need to learn how to read paytables to find which machines offer this advantage (only a very few machines at SOME casinos). Second you need to learn how to according to the rules of perfect play (its different for each type of VP paytable). Even when this is done you on average make about $2.50 and hour and its VERY tedious. Make sure your a slot card holder and you always have your card in the machine.
Blackjack CAN (depending on the rules the casino plays by and number of decks) offer very good odds as well IF you play with whats called basic strategy (not card counting). Card counting in LOTS of work with not too much of an advantage over basic strategy (most people can learn basic strategy in 7 or 8 hours (and even less if you bring a basic strategy card to the table)) most people who set out learning to card count NEVER master.
THE FOLLOWING GAMES ARE EASIER AND STILL OFFER REALLY GOOD ODDS.
mini-baccarat (or regular baccarat if you can make the big minimum bets). Its like a slot machine with cards and a minor choice (betting banker or player). all you need to know is ALWAYS bet for the banker.
Craps bet on the pass line when a point is established take the most odds possible.

Best odds that's easy; Card counting at Blackjack is recognized as having the best odds. However i doubt you can count cards without practice, practice, practice. Playing video poker following perfect strategy on a machine with correct payout table. It's one of the few things that can be positive in the long run. It's too mechanical for some people though. All other games have to be approached as time fillers that where you could win but most likely wont.
