Alligator is a little like fish/rabbit and has a texture in common with rabbit so it will need to be tenderized by pounding slightly or marinating. There are many ways to cook it but grilling and deep frying seem to be the favorite of most cooks. Most recipes call for a spicy Cajun style but I like it with butter lemon and capers. there are many websites with recipes as well as several you can order it directly from. Good Luck!

Long slow cooking would work. so a soup or stew would be a good choice. If the pieces are large you could pound them thin and fry them quickly. The pounding should tenderize them frying quickly will prevent them from getting tougher. Very much like cooking a piece of meat to rare will keep it tender or cooking all day will make it tender as well. I have had it as deep fried nuggets and it is pretty good it was a bit "toothsome" but not overly tough. Marinating may help as well. Papaya has a natural tenderizer in it, buttermilk will also tenderize meat. I would not marinate more than 2 or 3 hours or the meat may get mushy as it breaks down.

it really does taste like chicken or pork, but if even slightly overcooked it becomes extremely tough,
most people panfry it in a light batter with some lemon, but there is a restaurant in the TB area (actually temple terrace but w/e) called gators dockside that makes it wonderfully

As cliche as it sounds, I find it tastes a lot like chicken. It's good grilled or baked, though I imagine slicing and frying would be good too. It's a bit more rubbery than chicken, but still easy to cut and prepare.

I have had gator, and didn't think it tasted all that much like chicken. It does have a different texture. I like it breaded and fried or cooked on a grill glazed with BBQ sauce.

You'll find it fried pretty much anywhere around here (Tampa) that serves it. You can go to Gator's Dockside on Fowler Ave and have it there. That's probably the best place you'll find. And, it tastes like chicken.
