I do my pot roast that way all the time. I use a 4 qt cast iron Dutch oven.
Brown your (3 pound, salted and peppered) roast in bacon grease or butter on all sides.
Add 3 c beef broth, 1 clove chopped garlic, peeled potatoes and carrots. The potatoes should be about 4" in diameter or cut to about that size.
Simmer gently at least 3 1/2 hours. Four or 4 1/2 is better. It will be great.

Yes, if you have a low enough heat and enough liquid to braise the roast. Plan on several hours, depending on size and cut, and keep lid tightly closed except to check occasionally.

Yes you can!!! just remember to cook it slowly...and keep an eye on it....
All the other posts are giving you good ideas!!! since I can't vote yet....I say.....follow their directions...and you will be happy with your roast.

Sure, just keep enough liquid in the pot and it's fine.
