I recently bought some chicken and apple sausage because I don't eat pork and it is supposed to be made of chicken.. but the label says it contains pork casing. What is this?

It's the thin membrane from a pig's intestine. Synthetic casings are available. Take the sausage back, explain your position, and ask them if they have some available with synthetic casings.
