Basic Chocolate Chip & Nuts Muffins
• 2 cups all-purpose flour • 1/2 cup sugar • 1 tablespoon baking powder • 1/2 teaspoon salt • 1 egg • 3/4 cup skim milk • 1/3 cup canola oil • 1 cup semi-sweet chocolate chips • 1 cup walnuts, toasted, chopped
Instruction:
1. Preheat oven to 400 degrees.
2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
3. Make a well in the dry mixture and add egg, milk, and oil. Combine just to moisten (over mixing will make tougher muffins).
4. Stir in chocolate chips and nuts
5. Pour batter into muffin liners or greased muffin tin and bake 20 minutes or until toothpick comes out clean. Let slightly cool before serving.

Chocolate Mousse
• 1 cup semisweet chocolate chips • 1 large fresh egg • 1 teaspoon vanilla extract • 1 cup heavy cream, heated • Sweetened whipped cream for garnish
Instruction
1. Place chocolate chips, egg and vanilla into the container of electric blender and blend for 30 seconds.
2. Remove center of blender lid and while machine is running, slowly pour heated cream into the chocolate mixture. Blend until well mixed and chocolate chips are melted.
3. Pour into parfait or wine glasses. Refrigerate until set.
4. Serve garnished with a dollop of sweetened whipped cream.

Chocolate Fudge
• 1 pound (about three cups) chocolate • 1 14-ounce sweetened condensed milk • 1/2 teaspoon vanilla or almond extract (if you use almond) • 1 cup walnut pieces or almond
Instruction:
1. Line an 8x8-inch baking pan with foil.
2. In heavy saucepan, heat the chocolate and sweetened condensed milk until the pieces are melted and the mixture is smooth. Remove from the heat. Stir in the vanilla or almond flavor, and walnuts/almond. Pour the fudge into the prepared baking pan. Cover and freeze for four hours or until firm.
3. Holding the edges of the foil, lift the block of fudge from the pan. Use a sharp, serrated knife to cut the fudge into squares. Store your fudge in the refrigerator or freezer.
Variations: Add walnuts, raisins, candy pieces, or candied fruit. For white chocolate variations, use mint extract.
TIP: If you leave this out on a warm counter, this fudge can get sticky. Keep it in refrigerator or the freezer.

• 2 cups semi-sweet chocolate chips • 1/2 cup sugar • 1/2 cup half-and-half •1 teaspoon vanilla
Instructions:
1. Combine all ingredients in top of a double boiler; bring water to a boil.
2. Reduce heat to low and cook until chocolate melts, stirring mixture occasionally.
3. Pour into fondue pot, and place over fondue burner.
4. Serve with assorted fruit or cake.

Brownies:
1 cup shortening
1 cup sugar
1 cup brown sugar
4 eggs
1 1/4 cups flour
1/2 cup cocoa
1/4 teaspoon salt
2 teaspoons vanilla
1/2 cup nuts
Preheat oven to 350°F.
Cream shortening and sugars, and add eggs.
Beat until fluffy.
Sift together flour, cocoa and salt, and add mixture to shortening mixture.
Mix well.
Add vanilla and nuts.
Pour into a large, greased cake or jelly roll pan.
Bake for 30 minutes.

What you will need:
~9 ounces unsalted butter, cut into chunks
~8 ounces bittersweet chocolate, coarsely chopped
~1 1/2 ounces unsweetened chocolate, coarsely chopped
~6 eggs
~1 cup and 2 tablespoons granulated sugar
~1/8 teaspoon salt
~1/3 cup cake flour
~1 cup toasted hazelnuts that are coarsely chopped
~THIS IS OPTIONAL: Nutella (chocolate-hazelnut spread)
~Whipped cream or vanilla ice cream
Instructions:
~Preheat the oven to 325 degrees. Lightly butter a 9-inch springform pan.
~Combine butter and chocolates in the top of a double boiler. Melt over hot (not boiling) water. Set chocolate and butter mixture aside to cool slightly.
~Separate the eggs, placing the yolks in a medium bowl and the whites in a large bowl. Add sugar and salt to yolks; whisk to combine. Whisk in melted chocolate. Sift cake flour over chocolate mixture; whisk to combine. Fold in chopped hazelnuts.
~Using beaters or a clean whisk, whip the egg whites to soft peaks. Fold the whites into the chocolate mixture, combining gently to deflate the whites as little as possible. Pour the batter into the prepared pan. Bake about 45 minutes, until the cake rises and cracks slightly. Let cake cool (it will fall a bit), then remove from the pan. Garnish the cake with toasted hazelnuts, or pipe stars of Nutella around the edge. Serve with whipped cream or vanilla ice cream.
