What do you and your guests like? One year at my grandparents' place, they had a full bar but all we were served was margaritas. Another year when I was visiting a friend, we had vodka and cranberry juice.
Everyone has different likes and dislikes so it's really hard to judge generically. I love fruity frozen drinks and Bailey's in hot cocoa. I don't drink champagne, wine or beer so if that's all that's available, I'll be drinking soda.
Wine coolers are good although not everyone likes them. Have Kahlua, Baileys, peppermint schnapps, Malibu rum, etc on hand to add to hot cocoa. Rum and vodka both go great with cranberry juice. You could get a bottle of Hpnotq (sp?) which is a festive wintery blue.
Take a look online like at drinkalizer.com or any of the official sites for the alcohol brands and there are a ton of recipes to choose from.

If you're on a budget, but want some drink-making flexibility, I'd recommend getting a bottle of vodka, a bottle of rum and a bottle of Kahlua. Then grab some orange juice, some Coca-Cola, and some milk.
This collection gives you a "mini bar" of sorts. You can, for example, make a "screwdriver" with a mix of Vodka and orange juice, your basic "rum and coke", or a "White Russian" (a mix of vodka, Kahlua and milk). You could even make a "Kahlua-hoo" if you mix 1oz. Kahlua with 1 1/2oz. of vodka and YooHoo chocolate drink.
Those who don't like the mixed drinks can do shots with the vodka and/or rum, too. (But personally, I think shots are a bad idea for New Years Eve, where you want to be sure you "pace yourself" for a while - so you're not too drunk to see the year flip over to 2008!)
It's also sort of a New Years' tradition to get a bottle of champagne for a midnight toast.

grab a bottle of fine tequilla, one of higher-quality than cuervo. get a bottle of nice whiskey, like some maker's mark or wild turkey 101. get a bottle of bubbly for new-years toasts. get a case of beer for in between, and then some OJ, coke, triple sec, lime juice, grand marnier, a fifth of tanqueray, a handle of cheap vodka, a keg of PBR and some forties of OE. you will set the party off.

I say get drunk as hell on malt liquor and kill joan h with a hack saw while you are blacking out.
beyond that, since drinking a little won't kill you, get Captain Morgan's Private Stock rum, that stuff is good.
