I have several cans of pumpkin pie filling in my cupboard . I could make enough pumpkin pies to feed an army . I like pumpkin pie fine, but if I make and eat enough pumpkin pies to use all these cans -- I might get sick and tired of it . Is there anything else I can do with it ? Does anybody have any good recipes that use pumpkin pie filling ?

YOGURT PUMPKIN PIE

3 beaten eggs
2 cups cooked pumpkin
1-1/2 cups plain yogurt
3/4 cup maple syrup
2 tablespoons Myer's dark rum
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla
pinch of salt
1 pie crust (bottom)

If using fresh pumpkin, drain in cheesecloth to remove excess liquid.

In the bowl of an electric mixer, combine ingredients (other than pie crust).

Pour filling into an 8-inch pie crust.

Bake at 425°F for 15 minutes. Reduce heat to 350°F and allow to bake until custard sets (about 1 hour more).

Made this beauty for thankgiving, got a good response.

INGREDIENTS
1 (15 ounce) can pumpkin puree
1 (12 fluid ounce) can evaporated milk
3 eggs
1 cup white sugar
4 teaspoons pumpkin pie spice
1 (18.25 ounce) package yellow cake mix
3/4 cup butter, melted
1 1/2 cups chopped walnuts


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
In a large bowl, combine pumpkin, milk, eggs, sugar and spice. Mix well, and pour into a 9x13 inch pan.
Sprinkle dry cake mix over the top, then drizzle with melted butter. Top with walnuts.
Bake at 350 degrees F (175 degrees C) for 1 hour or until a knife inserted near the center comes out clean.

Pumpkin pancakes (I actually leave out the drippings, vanilla & allspice, but include it for completeness) - very yummy with maple syrup.

Ingredients
1-1/2 cups unbleached all-purpose flour
2 Tablespoons double-acting baking powder
2 Tablespoons firmly packed light brown sugar
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground allspice
1-1/2 cups canned evaporated milk (not condensed)
1 cup solid-pack canned pumpkin
2 large eggs, beaten lightly
1-1/2 teaspoons vanilla
1/4 cup bacon drippings

In large bowl stir together all dry ingredients. Stir in milk, pumpkin, eggs, vanilla, and bacon drippings. Combine well. Heat a greased griddle over moderate heat until it's hot enough to make drops of water scatter over its surface. Pour batter onto griddle by 1/3 cup measures. Cook for 2 minutes per side, or until they are golden and cooked through.

Serve with maple syrup, honey, or fruit.

Pumpkin Chicken Soup-

I' searched several recipes for it but the closest thing I an find is a Thai Pumpkin. I always make mine from what ever is in the fridge.

Heres a real loose recipe on how to make it...

A couple cloves of garlic.. brown them in pot with a bit of olive oil, add a meducim sized chopped onion to it, stir and fry until starting to become transparent, add washed chiken (wash chicken in lemon juice) I use what ever chicken is on sale, sometimes its thighs and legs, some times jst wing parts. start browning chicken, season with black pepper, thyme, onion powder, garlic powder, powdered mustard, 2-3 pimento seed, a few corianders, a couple shakes of soy, a couple shakes of bitters, and a good shot of wine and a hot pepper. cook this until its browning, add a couple chicken cubes and some water, or a can of broth. simmer this, for a a few minutes.. 10 maybe.. while your simmering that. cut up a few potatoes, carrots, and open the pumpkin. add the potatos and what ever veggies you want in it. let cook til potatoes are starting to get tender.. you may have to add a bit of water to this.... add the pumpkin to this mixtue.. looks gross at this point and stir it in till it start to disolve a bit, simmer a few more minutes.. add about a half can of coconut milk to it. (more or less) and simmer some more.
You may have to add water, broth along the way depending on how much liquid it is absorbing..
