Man, some here are missing the point. It's not about if something exists, the phrase means we have come to the realization that we exist. Rocks and chairs haven't done that

You are what you think you are.
Example: Someone says something to me that I consider insulting or hurtful. I think I am insulted, therefore I am insulted. Now, I do have another alternative in how I "fill in the blanks". I think I am amused, therefore I am amused. Whichever thought I choose is the one that carries over into the "I AM".

Dead bodies do not think, but the exist. Brain dead individuals are alive and existing but not thinking. Rocks have no nervous systems but they exist.
I'd say that I think therefore I am is not a good arguement.

Yes, if he means it in the same sense as Descartes. Any entity that is capable of thinking definitely exists.
EDIT:

Usually it follows that you are or tend to become what you think if you fulfill the requirements of what you think you are.
