If you are looking for a substitute for the properties of olive oil, but do not prefer the taste...try safflower oil. It has the 'good for you' properties without the 'flavor' of olive oil. Or as most people have suggested, apple sauce. Personally, I would go for the safflower oil.

apple sauce
Yep! It does work. It's a great way to make a recipe lower in fat. Great for quick breads, brownies, bread, and cakes. I haven't tried it for cookies yet. Use it 1 for 1...1/2 cup vegetable oil? Then sub. 1/2 cup apple sauce.

use melted butter, melted lard, melted magarine, melted spread, you can also use both of those oils.
You can use apple sauce for apple brownies, lemon curd for lemon ones, jam for fruity brownies, for raspberry or strawberry blend the furits in a belnder and use that.
peanut oil will make it have a deep nutty taste, olive oil will ad a deep rich taste.
Anything liquid should work well...
Good luck - and save some for meee! xx

Go with the olive oil. I've used it in a pinch for chocolate cake and it worked out fine.

olive oil is a type of vegetable oil...so yes you can use that but you might be able to taste a slight difference...the consistency should be the same though.
Also margarine(fake butter) is vegetable oil based as well.

Look for a brownie recipe on the internet that does not require vegetable oil.
Most box recipes require it and no substitutions can be made.

Either one would work. I would go with olive oil.
